Recipe: Z’Tejas Cornbread Copycat

Just 3 ingredients and you're left with restaurant style cornbread. Honestly it couldn't be easier or yummier!
  Z'Tejas was one of those restaurants the musicmaker and I went to A LOT when we were dating and first married. It was yummy and their complimentary cornbread is SO good. Unfortunately they seem to continually change their menu and after finding new favorites to only find them off the menu next time we showed up the restaurant got retired from our rotation. Luckily a friend shared this great recipe that tastes like a Z'Tejas cornbread copycat to me.       Ingredients
  • one egg
  • one box of jiffy muffin mix
  • one can of creamed corn
Put into a pie pan (or whatever type of baking dish you prefer) and bake at 400 F for about 20-30 minutes or until browned on top and toothpick comes away clean. So yummy and so easy. Also if you're adventurous it looks like Z'Tejas actually has a cornbread recipe on their website but it is definitely more involved and has more ingredients. You also might like:

BEST Blueberry Muffin Recipe with Streusel Topping

I don't believe there are many better ways to start your day than with a delicious warm blueberry muffin with streusel topping and dollop of sweet butter.

It's a keeper. Our new family favorite blueberry muffin recipe. Great breakfast idea would be good as a quick bread too.

This simple blueberry muffin recipe is so good your whole family will fall in love. I have made it with both fresh and frozen blueberries and both work equally well. They are perfect for lazy weekend mornings and if you're lucky enough to have leftover they make a great weekday breakfast!

Best Blueberry Muffin Recipe with Streusel Topping

Muffin Batter
  • 1 1/2 C Flour
  • 3/4 C sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1/3 C oil
  • 1/3 C milk
  • 1 C blueberries (fresh or frozen)
Mix the first group of ingredients. In a separate bowl combine the wet ingredients. Combine with 10 strokes being careful not to over mix. Pour into muffin tins. Streusel Topping
  • 1/2 C Brown sugar
  • 1/4 C flour
  • 1 1/2 tsp cinnamon
  • 1/4 C cold butter
Combine the dry ingredients. Cut in the cold butter. Spoon on top of the muffin batter. Bake muffins at 400F for 20-25 minutes. Makes one dozen muffins.

Rich and buttery blueberry muffin recipe. SO good will make again for breakfast or brunch

I love how quickly this recipe comes together it's fabulous for a fun weekend treat but nice enough to add to your brunch menu when entertaining. They also reheat wonderfully! Oh man I think I'm going to have to make a batch of these soon.

S’mores Mini Donut Recipe

Easy mini S'mores Donut recipe You guys know I'm a donut lover. If you follow me on Instagram you'll often see me indulging in the delicious mini donuts from Art City Donut Truck but if you don't have one near you can make yummy mini donuts at home.  Today I have yummy and S'Mores Mini Donuts Recipe. If you've never tried making donuts at home before they are surprisingly easy and the flavor of a freshly fried warm donut cannot be beat.

Fool proof mini donut recipe

Basic Donut Recipe
  • 2 1/4 tsp yeast (or 1 packet)
  • 2 TBS warm water
  • 3/4 C lukewarm milk
  • 1/4 C sugar
  • 1/2 tsp salt
  • 1 egg
  • 3 tsp shortening
  • 2 1/2 C AP flour
  • Oil for frying
  1. In a large bowl proof the yeast by sprinkling over warm water and letting sit for 5 minutes or more. Yeast should be foamy. If it’s not foamy your yeast might be too old or your water might have been too hot and killed them.
  2. Add  milk, sugar, salt, egg, shortening, and 1.5 C flour. Mix on low. Slowly add in flour 1/2 a cup at a time until your dough starts to pull away from the sides of the mixing bowl. Knead for a few more minutes.
  3. Turn dough out spray the bowl with spray oil and put the dough back in the bowl covered to rise. Set in a warm place until it doubles in size. You can speed up the rising process by sticking it in the oven with the light on and a bowl of warm water and the oven door closed (but not on).
  4. Next turn the dough out onto a floured surface. For mini donuts roll the dough to about 1/4 inch thickness. For regular donuts use 1/2 inch thickness. Then cut with a donut cutter like this one.
  5. Heat oil to 300 F and fry donuts flipping to get both sides golden. Pay attention they will fry up fast!
  6. While they are still warm glaze and top the donuts and serve

S'mores Glaze
  • Marshmallow Fluff
  • Chocolate Chips
  • Graham Crackers
Mix the Marshmallow fluff with some water and microwave. I just did a heaping tablespoon of fluff to a couple tablespoons of water and stirred. Melt the chocolate in the microwave in 30 second increments until they are 80% melted and then stir to finish melting completely. Super easy and SUPER tasty.

Spinach and mushroom bruschetta anyone? I love this recipe because it's something that you can throw together as an appetizer on small pieces of bread or do on a full sized loaf for a lighter meal all on it's own. Plus it's a great and yummy way to get a ton of veggies in.

This dish is not just speedy to assemble but it's absolutely delicious. With it's simplicity it's easy to make it vegan, vegetarian, or if you want to add some meat even more hearty. I've been known to make this for myself for a quick lunch. Spinach and Mushroom Bruschetta Recipe

Spinach Mushroom Toast-001s

  • Spinach
  • Mushrooms sliced
  • Butter or butter alternative
  • Garlic Salt
  • French Bread
  • Goat Cheese (optional)

Spinach Mushroom Toast s

  1. Start by making some wilted spinach. Heat butter, butter alternative, or olive oil in a pan over medium heat. Add spinach and garlic salt to taste to the pan and move with a spatula until wilted. This will only take a few minutes. You only need a small amount of butter/oil. I've even used just spray oil. Set aside.
  2. Saute the mushrooms in butter (or alternative) with garlic salt. Set aside
  3. Next make garlic bread. I know other people take time using fresh garlic or rubbing garlic on the bread but my favorite garlic bread that is always a hit with my guest is just buttered bread sprinkled with garlic salt and cooked under the broiler.
  4. Top the garlic bread with a generous layer of spinach and then with mushrooms.
  5. Add a sprinkling of crumbled goat cheese if desired and enjoy!

The Best Quick Buttermilk Waffle Recipe

This buttermilk waffle recipe is the best. Easy to have breakfast ready in less than 15 minutes. There is just something so good about a fresh buttermilk waffle. Barely crisp on the outside and soft and warm on the inside. Not only are waffles DE-licious, they are crazy fast. They are ready to be cooked up as fast as you can stir the ingredients which makes them the perfect post-church or any day brunch.

Chicken and Waffles. This is the best buttermilk waffle recipe.

Add your favorite sweet or savory toppings (like this oven fried chicken) and you've got totally different flavors in a snap. Likewise you can throw some extra stuff in the batter and change things up that way too. Seriously endless possibilities!

Hands down the best fast buttermilk waffle recipe. Great for fast breakfast or brunch or even dinner with chicken.

Basic Buttermilk Waffle Recipe
  • 2 C Flour
  • 2 C Buttermilk
  • 2 TBS Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 C Butter, melted
  • 2 Eggs
You can be all technical and mix the dry and wet ingredients in separate bowls but I hate dishes and I can't tell a difference so I just mix it all in one bowl. I start with the wet ingredients. Mixing the melted butter with the buttermilk then whipping the eggs into the bowl. After that I add all the dry ingredients and stir. It's really that easy. Heat waffle iron and cook up your waffles. This makes 6-8 waffles depending on the size of your waffle iron.

For more fun you can try throwing a handful of chocolate chips to the batter before cooking it up. I like to do a combo, plain, chocolate chip, and sometimes cheese. Oh yum I'm going to have to make these again (even though I just had them this morning ahaha).

And if you are an addict like me you could go for waffles for dinner with yummy Chicken and Waffles. Well I guess you could do that for lunch and breakfast too but you know what I mean.

I'm so excited to share a few awesome Hunger Games projects that I made from Heidi of Digknity's Mellark Bakery design. I love the design so so much, it's so perfect. And luckily for you she has graciously allowed me to share it here so you can make your own awesome creations (see below for more details). I made Teddy a little onesie with the design on it which you might remember from my baby book round up post a few weeks back, I definitely will be making myself one soon!

You could also use the design to make treat tags like I did for my Chocolate Chip Banana bread. I tried to print it directly on my cute treat bags but my printer wasn't cooperating. If I had time I would have run out to get some clear shipping labels. I have dreams of printing some paper to wrap around fresh loaves of homemade bread, wouldn't that be fun.

Delicious and easy Chocolate Chip Banana bread recipe - Rae Gun Ramblings

Mrs. Mellark's Banana Bread Recipe
  • 3/4 C Sugar
  • 1/2 C Butter
  • 1 C Mashed bananas
  • 1/2 C Sour Cream
  • 2 Eggs
  • 2 C All purpose flour
  • 1 tsp Baking soda
  • 1/2 tsp salt
  • 3/4 C chocolate chips
  • 1/2 C Chopped nuts (optional)
Preheat the oven to 350F. Cream the sugar and butter. Mix in the banana, sour cream, eggs, flour, baking soda and salt. Stir in the chocolate chips and nuts if you are using them. Pour into baking dish and bake until a toothpick comes out clean about 60 minutes.

I love how versatile the design is. You could print it up as is, throw it in a frame and give it to your favorite Hunger Game fan. Or if you are like me and can't leave any plain tote back or tee shirt unembellished you can use it as a stencil for freezer paper stenciling or if you have a cutting machine as a design for iron-on vinyl.

The apron I made came together SUPER fast. I bought one of those premade blank ones from the craft store and then I just cut some iron-on vinyl out on my Cricut and slapped it on. If you've never used iron-on vinyl I'm kind of an addict and I have a post all about how to use iron-on vinyl. Really it's great stuff!

Peach Donuts Recipe The Donut Man Knock-Off

These peach donuts are so yummy and easy. Definitely a new favorite recipe. at Rae Gun Ramblings

One of the first places I was taken as a college freshman in Southern California was to the 24 hour donut shop The Donut Man. Throughout my college years and every time we're back in the area I make a point of enjoying their tasty donuts. One of my favorites is their peach filled donut. I decided to no longer fight the craving and make my own Peach Donut Recipe inspired by The Donut Man.

Delicious peach donut recipe - Rae Gun Ramblings

If you missed my basic donut recipe donuts are surprisingly easy to make. Just find some ripe peaches and you're good to go. You can tweak this recipe to be dairy free or even vegan just use egg and dairy substitutes (I've done it before and it works well).

I used these tasty donut peaches just because it's what they had at my market and now I get the perk of double donuts in this recipe. But really any peaches will work great. I wanted to lighten the recipe so I decided not to glaze the fruit but you can easily glaze the fruit (which makes them more like The Donut Man ones). To do that just toss the peaches in the same glaze that's used on the donut part.

Peach Donut Recipe

Donut Dough Recipe
  • 2 1/4 tsp yeast (or 1 packet)
  • 2 TBS warm water
  • 3/4 C lukewarm rice milk
  • 1/4 C sugar
  • 1/2 tsp salt
  • 1 egg
  • 3 tsp shortening
  • 2 1/2 C AP flour
  • Oil for frying

  3. Turn dough out spray the bowl with spray oil and put the dough back in the bowl covered to rise. Set in a warm place until it doubles in size. I put it on my front porch and it took about 30 minutes in 90F weather.
  4. Turn the dough out onto a floured surface. Roll the dough to about 1/2 inch thickness. You can use either a circle cookie cutter or glass cup.
  5. Heat oil to 300 F and fry donuts flipping to get both sides golden. Pay attention they brown very fast!
  6. While they are still warm glaze the donuts

Glaze Recipe

  • 2 TBS butter
  • 1 C powdered sugar
  • 3/4 tsp vanilla
  1. Melt earth balance over low heat.
  2. Stir in powdered sugar and vanilla.
  3. While the donuts are still warm dip in the glaze. I like to dip both sides. The donut dough is not very sweet you need the glaze to get a good flavor.
  4. Top with sprinkles or other decorations.
Note: if you plan on glazing the peaches then you'll want to double the glaze recipe. Once glaze is dry cut in half with a serrated knife and fill with peaches. You'll need about 6 peaches.
