Kielbasa and Sweet Potato Hash Recipe and 50 Easy Weeknight Meals!

Is it just me or does it seem like Fall gets SUPER BUSY? I mean I know for me it’s my busiest time of year but it seems even friends and family seem to have less time with school going back and holidays creeping up. So really who can’t use some easy weeknight meals this time of year right? I’ve teamed up with a ton of blogger friends to bring you guys 50 Easy Easy Weeknight Meal. My contribution is a super easy and satisfying Kielbasa Sausage and Sweet Potato Hash recipe that I whip up all the time.

Kielbasa and Sweet Potato Hash Recipe

Ingredients

  • 1 large sweet potato
  • 1 large russet potato
  • 1/2 pack kielbasa sausage cut in slices
  • 2 eggs
  • steak seasoning

Directions

  1. Spray your large pan or wok with some spray oil and sautee the sausage and potatoes just to brown the edges. Season with steak seasoning and any other seasoning you desire.
  2. Add about 1/2 c of water and allow to cook in the water until the potatoes are tender. Sometimes I have to add more water. Stir occasionally.
  3. Poach (or fry) 2 eggs and serve on top of your has.

So easy right? And this is such a yummy comfort food sort of meal. I’ve done it with all kinds of different types of sausages and seasonings for different flavors. This recipe serves 2 adults but can be easily increased!

BEST Blueberry Muffin Recipe with Streusel Topping

I don’t believe there are many better ways to start your day than with a delicious warm blueberry muffin with streusel topping and dollop of sweet butter.

It's a keeper. Our new family favorite blueberry muffin recipe. Great breakfast idea would be good as a quick bread too.

This simple blueberry muffin recipe is so good your whole family will fall in love. I have made it with both fresh and frozen blueberries and both work equally well. They are perfect for lazy weekend mornings and if you’re lucky enough to have leftover they make a great weekday breakfast!

Our new favorite recipe. Made this blueberry muffin recipe this weekend and will keep it in the rotation. Great breakfast bread.

Best Blueberry Muffin Recipe with Streusel Topping

Muffin Batter

  • 1 1/2 C Flour
  • 3/4 C sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1/3 C oil
  • 1/3 C milk
  • 1 C blueberries (fresh or frozen)

Mix the first group of ingredients. In a separate bowl combine the wet ingredients. Combine with 10 strokes being careful not to over mix. Pour into muffin tins.

Streusel Topping

  • 1/2 C Brown sugar
  • 1/4 C flour
  • 1 1/2 tsp cinnamon
  • 1/4 C cold butter

Combine the dry ingredients. Cut in the cold butter. Spoon on top of the muffin batter. Bake muffins at 400F for 20-25 minutes. Makes one dozen muffins.

Rich and buttery blueberry muffin recipe. SO good will make again for breakfast or brunch

I love how quickly this recipe comes together it’s fabulous for a fun weekend treat but nice enough to add to your brunch menu when entertaining. They also reheat wonderfully! Oh man I think I’m going to have to make a batch of these soon.

It's a keeper. We all love this easy breakfast muffin. Great blueberry muffin recipe would also be good as a quick bread for a brunch menu.

What’s For Dinner

Spicy chorizo chili

After my great experience with the Sunbasket and my last Sew Our Stash creation which I loved but was definitely tighter than it should be I’ve decided I reeeeeeeaalllly need to get my eating into action. I think I have two main downfalls.

First we’ve started eating out A LOT. Not just dinners, we’ve gotten kinda bad. There have been days I’ve eaten out 3 times eep! And as much as I really do like eating out it’s getting expensive and we’re getting fat. So I want to get back on the meal planning schedule. And I think ever once in a while I’ll probably order a Sunbasket because I really liked that whole thing. If you’re curious about it my write has lots of info, there is a great deal to try it for the first week for only 5$ a meal, and my giveaway for a free week is still going on. But all that’s to say is I need a plan.

My second eating issue I have is snacking. I’m a stress eater and I lately I just find myself reaching for the snacks. Nothing huge is going on just the normal juggle. But I’ve started having a snack while Teddy naps and then late at night ack. Not only is it a snack but they have been meal sized snacks! The worst part is I’m not even hungry. So yes I want to try a plan. I’m going to write it out once again!

Breakfasts

  • Egg and English Muffin
  • Coconut Greek yogurt and Almonds

Lunch

  • Trader Joe’s Shrimp Nuggets (I’m obsessed)
  • Quesadillas
  • Pigs in a Blanket

Dinner

  • Burgers at Salt City Burger Co – sadly disappointing just not as good as I remember and greasy

  • OAK Wood Fire Kitchen – We had the White Pizza (super yum) and the nachos (not bad but we both thought there was something strange)

Hi gang it’s Marissa here again. I am thoroughly enjoying Fall! Our weather has been gorgeous, my busy season for work has passed and I’m getting excited about all the holidays. What’s For Dinner: Back in the Saddle

Bacon Brussels Sprouts - Rae Gun Ramblings

I’ve finally started cooking again. Between adjusting to life with Teddy and then the craziness of my Halloween orders it’s been FOREVER but I missed my weekly menu planning so I decided to bring it back.

My nieces are really into the show Chopped and watching it with them has really convicted me over how much we eat out. If you’ve never seen the show the contestants are given random (oftentimes undesirable ingredients) that they have 30 minutes to make a dish using the ingredients. The thing is everything always looks delicious. I figured if they can make something with their crazy ingredients than I should be able to make stuff with my whole fridge, pantry, and second freezer full of stuff. Am I right? I think something that will help me is that when I write up these plans I’m only allowed to put stuff that I have all the ingredients on hand to make

  • Delicious Focaccia that Heidi made, my sister smoked and grilled I contributed a salad and brownies. All of our tummies were happy. I was too busy chowing down to take other pictures.

What’s For Dinner Christmas Recap

Christmas Feast - Rae Gun Ramblings

I’m pretending that I have a normal job and am on vacation like everyone else. That’s okay right? We had a lot of yummy food over this last week. And I have to say it’s the first time we’ve had great holiday meals but didn’t go away feeling gorged which was so nice. We had Stuffed Shells on New Years Eve with both sides of the family (I’ll share the recipe soon) and my sister’s fantastic Prime Rib on Christmas.

We lucked out too because we all agreed that this year was her best yet! She also made a delicious blue cheese sauce to go with it and I brought my favorite asparagus with bacon and poached eggs. We finished off the meals with cheesecake on Christmas Eve and mousse and cheesecake on Christmas (I’ll have to share my mom’s mousse recipe it’s so yummy). My only regret is that I let my mom keep the leftover cheesecake, total mistake!

I’m realizing that Toasty is going to be here pretty soon and I’m getting a bit nervous. I’m trying to check a few things off my lists of things to do including make some freezer meals. I’m thinking of making at least one dish that I can double or triple to freeze each week. If you have any favorite freezer meals please let me know!
