It’s crazy because I don’t think that mother nature knows that summer is supposed to just around the corner, she is definitely a month behind where we live! Bacon and Cheese Croquettes Recipe

These potato, bacon and cheese croquettes I’m sharing today are SO yummy and as a bonus they are baked instead of fried. #Switch2Sourdough #collectivebias

It's a keeper. Super good potato cheese and bacon croquettes recipe. Freezes great and a great tutorial on how to make your own bread crumbs.

I’m a big fan of croquettes for every day food as well as entertaining because they are easy to make ahead of time and either finish cooking last minute or just reheat.

Breakfast potato bacon and cheese croquettes recipe

These ones are filled with potato bacon and cheese would be a tasty addition to any Easter or Mother’s Day brunch although I have to admit eating them because it was Monday as a good enough reason for us ;) I like using homemade breadcrumbs (directions for those below) since I can use California Goldminer Sourdough Bread which I usually have on hand for sandwiches. Also they get bonus points for their yummy flavor but also since sourdough doesn’t spike your blood sugar as much as other breads it’s one of those little swaps I like to do in my recipes these days.

Easter-Croquettes- ingredients and how to make home made bread crumbs

Ingredients

  • 1/2 C Coarse Bread Crumbs
  • 1/2 C Flour
  • 1 Egg
  • 2 Medium Potatoes
  • 1/2 C Shredded Cheese
  • 1/4 lbs Bacon
  • 1-2 TBS Green Onions chopped
  • Salt and Pepper to taste

Love these croquettes they are a great snack or addition to brunch.

Directions

  1. Peel and boil your potatoes until tender.
  2. Cook and crumble your bacon.
  3. Combine potatoes, cheese, bacon, and green onions and mash together with a fork. Add salt and pepper to taste.
  4. Form into patties. I usually do ovals that are more flat so that they will cook faster but I have also done small balls.
  5. Prepare coating station with a bowl with the beaten egg and a separate bowl with the bread crumbs.
  6. Coat the potato forms with flour and then roll in the egg and then the bread crumbs. Repeat for all pieces.
  7. Spray generously with spray oil on both sizes and bake in a preheated oven at 450 F until golden brown about 15 minutes. Flip around the 10 minute mark.

They are so good and easy. The recipe makes about 10 small (2x3x1 inch) croquettes. They are very filling and hearty. If serving as a side you only need 1-2 pieces. The recipe can easily be increased or decreased too and they freeze great.

How to make panko bread crumbs. Great homemade breadcrumb recipe

If you don’t already know how to make homemade bread crumbs they are super easy. I think it gives it that little extra something (plus you know exactly what goes into it). I like using California Goldminer Sourdough Bread that’s baked fresh daily at Smith’s and other Kroger stores. It is a sandwich loaf that you can find in their bakery section not the bread aisle.

To make the bread crumbs lay your bread onto a cookie sheet and dry it out by baking it at 300 F for about 15 minutes. Then just pulse it in your blender or food processor until you have coarse crumbs. This is a great way to use up extra bread that you might have left over from sandwiches or recipes. I keep a bag full of bread crumbs in the freezer for easy access.

And speaking of other uses for extra bread, this weekend we had a birthday party for my star and moon obsessed little boy and my mom made the cutest (and most delicious) homemade croutons by cutting the sourdough into stars, brushing with olive olive, sprinkling with garlic salt and Italian seasoning and then baking. Hogwarts House Elves Curry Puff Recipe

Super yummy curry puff recipe great for Harry Potter parties

I grew up eating curry puffs. To me they are comfort food and party food at their best. Everyone I’ve feed them to has loved them. And any time we have  Harry Potter party they are part of the menu along with Dumbledore’s Pensieve of course.

There isn’t anything in the books or movies called a curry puff but I’ve always assumed that Harry and his pals much on them. I think it has to do with the similarity to the English pasties and the curry that is so common in the area.Fun baby House Elves costumes. Mischief Managed Aprons

Either way they are delicious and a great treat. They can be made ahead and served room temp or hot from the oven. They are great for school lunches, after school treats or if you’re a savory breakfast girl like me a nice easy breakfast. I made a bunch of these when Teddy was a newborn since they were so easy to reheat and eat one handed.

Curry Puff Recipe

  • 2 Sheets Puff Pastry, thawed (1 box)
  • 1/2 lbs. ground beef
  • 2 potatoes, skinned and diced
  • 2-3 green onions, chopped
  • 1-4 TBS curry powder or paste (depending on how spicy  yours is)
  • salt to taste
  • water

This curry puff recipe so good. Everyone always asks for the recipe at parties

  1. Cook the ground beef and potatoes over medium heat until the beef is cooked through.
  2. Add about 1/2 a cup of water and continue cooking until your potatoes are tender to a fork. Stirring occasionally and adding more water as needed.
  3. Add the rest of the ingredients. Start with just 1 tsp of your curry substance and add more to taste.
  4. Remove from heat and allow to cool enough to be handled.
  5. Cut each sheet of puff pastry into 9 squares.
  6. Place a heaping spoonfull of the ground beef mixture into the center of each squre.
  7. Fold over and press closed with the tins of a fork.
  8. Bake at 400 F until golden brown about 20 minutes.

These can be served hot, room temp, or even cold. They freeze great and keep well.

Just give your House Elves the recipe and have them whip up a batch for your next party ;) But make sure they don’t eat them all before your guest get to them!

Fried Cream Cheese Avocado Shrimp Wontons

I’m still on vacation but before I left I asked my sister Tanya if I could re-post her cream cheese avocado and shrimp wonton recipe that she made for my birthday party and posted on her private blog.They were SO good. Here she is.

My big sis – the infamous Marissa from Rae Gun – turned the big Three Oh today. Her hubster – the equally popular Fisch (Daniel) the Music Maker – Yai Yai, myself, and her two friends Kelli and Linda conspired to throw her a surprise party!  And of course I had to make my famously yummy Fried Cream Cheese Avocado Shrimp Wontons. Yes I know you’re mouth is watering. They’re so easy and ohh so amazing.

[note from marissa: So I kinda had a dream a while back of delicious fried food and they not only remembered it but made it come true! Awesome huh? It was a fried food theme party the day after every one set new year’s resolutions bwahahaha. And yes those are pictures of fried food hanging from the ceiling.]


Just 4 ingredients and they’re all in the name!

Let the cream cheese come to room temperature. Devein and peel the shrimp. Next throw the shrimp in a small saute pan with a little oil. Season with whatever you have on hand. I used garlic powder, salt, pepper, no-salt-organic-everything-seasoning-that-isn’t-any-good-until-you-add-salt-to-it, and a dash of Italian seasoning.

Cook the shrimp all the way. It should be pink and not translucent – don’t over do it or your shrimp will be rubbery. Yuck! While the shrimp is cooking mash up two ripe avocados. Add a block of the soften cream cheese and mix it up. You should end up with a beautiful light green.


Now you need to chop up the shrimp. Don’t massacre it and turn it to mush, just chop it into tiny pieces. Then dump it into your avocado-cream cheese mixture and combine.


Mmmm I could eat this with a spoon…. Oops I forget the green onion. Chop up one sprig and throw it in. And while you’re at it add 2-3 shakes of soy sauce. Mix it all up and set it aside


Now grab your wonton wrappers. *I* find it helps to pull them apart and re-stack them first before your fingers get all gross. Next throw some corn starch in a small bowl with warm water. Keep the spoon in there because the corn starch tends to settle and you’ll need to keep mixing it up.



Now the fun part. Take a dollop of the mixture and place it into the center of the wonton wraper. Fold it into a half moon shape pinching it in the middle. You can just pinch it closed all the way around of do it the traditional way making little folds. I have no idea how to explain how to do this – here’s the link to the video Marissa did. Just note that they stay closed better if you do it the fancy traditional way – this goes for any type of wonton.




After folding 54 of these little nuggets of goodness you can freeze them – HA like they’d survive for long, they’re too good – or just go ahead and fry them up right away.
