I’ve been having so much fun seeing all the new Happy Harry Potter series creations from this year’s contributors. Teddy and I have been baking something every week and he’s a huge fan of my banana chocolate chip bread.

So much so that I made him a Magic School Bus cake for his birthday from the recipe. But as it turns out he’s not the biggest fan of chocolate. CRAZY I know. If he didn’t look like the perfect mix of my husband and I, I’d certainly get a DNA test.

But we discovered that the recipe tastes even better with butterscotch and it reminded me of delicious butterbeer from the Wizarding World of Harry Potter in Orlando. Speaking of the WWHP I want to head back so I can have more of all the delicious Wizard foods at Universal.

Banana Butterbeer Muffins Recipe Ingredients

  • 3/4 C Sugar
  • 1/2 C Butter
  • 1 C Mashed bananas
  • 1/2 C Greek Yogurt (or sour cream)
  • 2 Eggs
  • 1 C All purpose flour
  • 1 C Whole Wheat flour (you can use all purpose if you want)
  • 1 tsp Baking soda
  • 1/2 tsp salt
  • 1 C chocolate chips

What to Do

  1. Preheat the oven to 350F.
  2. Cream the sugar and butter.
  3. Mix in the banana, sour cream, eggs, flour, baking soda and salt.
  4. Stir in the butterscotch chips. Pour into baking dish and bake until a toothpick comes out clean about 20 minutes.

Ingredients

Directions

  1. Cut caramel into thin strips.
  2. Wrap around pretzel rods.
  3. Melt chocolate chips with a small amount of crisco (about 1 cup chocolate to 1/2 tsp crisco) in the microwave. Start with 30 seconds, stir and then re-zap in 10 second increments.
  4. Dip caramel wrapped pretzels in chocolate. Lay on wax paper to cool.

Pressure Cooker Indian Butter Chicken Recipe

Indian butter chicken is one of my favorite dishes. Who knew it could be so easy to recreate at home with an electric pressure cooker!

I am definitely new to the Instant Pot or electric pressure cooker world. At first I wasn’t sure what I thought but I’m starting to love it. More recipes like this Pressure Cooker Indian Butter Chicken and I’ll be a complete convert. Right now I can say it’s growing on me and I’m committed to using it a few times a week (all 3 times last week were winners yay!).

This Butter Chicken recipe is adapted from Pressure Cooking Today. I made enough changes to suit my cooking style and our families tastes that I thought I’d should share my tweaks but I definitely used her recipe as a starting point.

Ingredients

  • 10-12 boneless skinless chicken thighs (about 2.5 to 3 lbs)
  • 1 cans 28 oz diced tomatoes and juice (or I’ve also used 2 x 14.5oz cans)
  • 1/2 jalapeno pepper (you can use more if you want spice this amount is flavor without spice)
  • 1 inch fresh ginger
  • 1/2 cup (1 stick) butter
  • 2 teaspoons ground cumin
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt
  • 3/4 cup heavy cream
  • 3/4 cup Greek yogurt
  • 2 teaspoons garam masala
  • 2 tablespoons cornstarch

I've made this every week since I discovered this instant pot pressure cooker indian butter chicken recipe

Directions

  1. Cut chicken into bite sized pieces (1-2 inches)
  2. Grate ginger into blender or food processor (I used my ninja), add in tomatoes and seeded jalapeno. Blend until well combined. If you don’t have a microplane you can just chop it or press it but I hate biting into ginger so I like it really small.
  3. Set your pressure cooker to saute/browning or whatever you used to do that (mine I just hit any button with the lid open) add in butter and allow to foam up.
  4. Add chicken in 2 batches flipping to just barely brown the meat. Remove and set aside in something that will preserve any juice that comes off you want that.
  5. Add cumin and paprika to the butter and stir continuously for about 20 seconds.
  6. Quickly add in tomato mixture, salt cream, yogurt, chicken and any drippings that have collected. Stir to combine everything.
  7. Close the lid and cook on for 5 minutes. Since we’ve been sauteing it shouldn’t take long to come to pressure before it starts counting the 5 minutes.
  8. Allow to natural release (basically don’t do anything after the timer goes off) for 10 minutes. Then do a quick release.
  9. Remove about 2 TBS of liquid from the pot and mix with cornstarch.
  10. Stir back into the pot along with the garam masala.
  11. Turn on saute or equivalent, bring to a boil and allow the curry to thicken to your liking.
  12. Add any additional salt according to your tastes and serve over rice or with naan or both!

Now I don’t have an Instant Pot brand pressure cooker but it should work the same way regardless of which you have. When I bought mine I didn’t realize there was such a hype about one brand. But it has done the job fine and it’s been easy enough after the initial learning curve to “translate” instant pot recipes.

Cake Mix Peanut Butter Chocolate Cookies

I love a good Christmas cookie exchange but this time of year is so busy that I’m thankful for recipes like this Cake Mix Peanut Butter Chocolate Cookies recipe.

Hands down our favorite cookies. Easy cake mix peanut butter cookie recipe so so good.

This recipe is crazy easy and the cookies are super yummy. These are perfect for those December weeks when you want fresh baked cookies but have one billion activities and responsibilities to take care of.

That said these would be super yummy any time of year. I made a batched today at the same time that I made dinner. They are as fast and easy as making a box of brownies but definitely with a little special touch

Perfect cookie for peanut butter chocolate lovers. This cake mix cookie recipe is so easy and delicious.

Ingredients

  • 1 Box Devil Food Cake Mix (I used this one)
  • 1/3 C vegetable oil
  • 2 Eggs
  • 3/4 C Butterscotch Chips
  • 40 (ish) Peanut Butter Cups

Directions

  1. Mix together everything except the butterscotch chips and mints.
  2. Once combined stir in the chocolate chips.
  3. Drop onto a cookie sheet in 1 inch scoops. Keep it small these spread a lot!
  4. Bake at 350F for 8-10 minutes.
  5. Remove from oven and immediately top each with an unwrapped peanut butter cup.
  6. The heat from the cookie should melt the chocolate and when it does take a knife and smoosh it down to make the marbled look. If your cups don’t get spreadable you can pop the cookie sheet back in the oven for a minute.

Everyone loves this easy cake mix cookie recipe. Peanut butter chocolate fans will love this quick dessert.

In fact I’d like to make a case that theses totally count as a well rounded breakfast if you throw in a nice glass of milk! Teddy totally agrees. If you come to my house you’ll probably be feed a vast array of imaginary and play food from my little chef. He seriously cooks ALL.THE.TIME.

It was so fun having him “help” me make the cookies from his Little Partners Learning Tower. And by help obviously I mean mix up my ingredients and eat chocolate chips like they were going out of style. But really this guy loves to cook I have started letting him crack eggs by himself and he does great.

I do use fresh cranberries and I think they and I think they add a little something special to the recipe. In fact I usually buy a couple extra bags during the winter to throw in the freezer so I can whip up some of these yummy cookies when they are out of season. I wouldn’t substitute dried cranberries.

Ingredients

  • 1 C Earth Balance (you can substitute butter I prefer the texture with the earth balance)
  • 1 C sugar
  • 1 C brown sugar
  • 2 Eggs
  • 2 C flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 3 C Slow Cook Oats
  • 1 1/2 C Chocolate Chips
  • 2 C Fresh Cranberries
  • 1 tsp vanilla
  • 1 tsp cinnamon

Love these. Cranberry chocolate chip oatmeal cookies. Great recipe

What to Do

  1. Add earth balance, sugar, brown sugar,  eggs, vanilla and cinnamon to the mixing bowl (I use my Kitchen aide). Mix until creamed.
  2. Add flour, baking powder, and salt. mix until incorporated.
  3. Stir in oats chocolate chips and cranberries until evenly distributed.
  4. Bake at 350 F about 10-14 minutes. When they are done parts will look a little toasted and parts will still look wet. Remove and allow to cool on the cookie sheet they will continue to cook there so don’t overcook them or else they’ll be really hard.

Makes about 4 dozen small cookies and the dough freezes great. I like to scoop the dough out and freezes it in individual balls to bake up later.

For those of you curious about the Original Learning Tower, it’s pretty amazing. Teddy calls it his castle and he LOVES playing in it. I mean it’s perfect for having him cook with me since it makes him the perfect height for the counter but he seriously loves climbing in it and playing with it aside from that.

I love that it’s designed totally with safety in mind. He can climb in and out all on his own and there is no way he’s going to tip it over. I don’t “let” him but he’s totally tried hanging on it in all kinds of ways before and it’s super sturdy actually it’s sturdy enough for me to stand in if I wanted to. I looked at this tower last year before Christmas because like I said Teddy has always loved cooking and now I really wish I had it back then when he was even littler instead of the step stool which I always had to have a hand on him while trying to juggle my kitchen tasks.

This is designed for little ones as young as 18 months old and the four sides make it great for containing the their busy bodies while giving them easy access. It’s so nice to be able to actually cook when he’s up at the counter “helping” me or just wanting to see (he always wants to see what I’m doing). I don’t have to worry that he’s going to slip off a step because he’s not paying attention or tip it because he IS a wild one. Also it comes right flush with the counter so there’s none of that nerve wracking reaching or spilling between a gap that happened when we used a step stool.

Sometimes I even have it in my work room and tell him if he wants to be in there with me he has to stay on his “castle”.

It works great because it’s so spacious (actually big enough for two kids to stand on together) that he can sit up there with toys or get up and down on his own.

Crock Pot Beef Onion Wine Sauce Recipe

This time of year is SO busy I’m grateful for delicious and easy meals like this Crock Pot Beef in Onion Wine Sauce recipe that we love over pastaIt's a keeper. Easy dump crock pot beef in wine onion sauce. Great over pasta for an easy slow cooker dinner recipe

All you have to do is dump the ingredients together and bam a few hours in the slow cooker and you have a tasty meal the whole family will love (I know mine does)!

Ingredients

  • 2 lbs Beef Stew Meat, 1 inch cubes
  • 1/2 onion, coarsely chopped
  • 1 envelop onion soup mix
  • 3 TBS cornstarch
  • Salt and Pepper to taste (usually I don’t need any)
  • 1 1/2 C Red Wine
  • Egg Noodles for serving

How to make the best onion beef crock pot pasta sauce (and double duty leftover recipes)

Directions

  1. Place all ingredients (except for the egg noodles) into the crock pot and stir.
  2. Cover and cook on high for 5-6 hours or low for 10-12 hours.
  3. Serve over cooked pasta

So insanely easy and so yummy! As a bonus, if you happen to have leftovers you can use them in lots of ways.

Honey Peanut Butter Chocolate Chip Ice Cream Recipe

Hands down my favorite homemade ice cream recipe. Not too crazy as flavors go but still a little unusual so it's special. Honey Peanut Butter Chocolate Chip Ice Cream great dessert.

I’ve been trying desperately to extend summer just a little longer. We had so much fun with the nieces home all summer and quite frankly I’m not ready for it to be over. All that to say is that I’ve been making up all kinds of silly reason to gather with the extended family just to enjoy each other’s company and enjoy these last few days of summer.

Delicious peanut butter honey ice cream recipe

This last time I made my favorite ice cream. It’s amazingly creamy and perfect for Peanut Butter Chocolate lovers but with more of a subtle flavor than some of the store bought varieties. As an extra little something special for the little guys I made a fun and easy toppings tray. Because an Ice Cream picnic complete with toppings bar is totally a reason to gather and celebrate am I right?

If you haven’t ever made real homemade ice cream before it’s totally easy but I’m not going to lie it’s kind of messy. You have to work fast and with all the ingredients it’s just impossible to keep your hands (or the machine and surfaces) spotless. I used to try and stay clean but now I make sure to have a tub of Clorox Wipes on the counter OPEN and I’m good to go.

Honey Peanut Butter Chocolate Chip Ice Cream Recipe

Ingredients

  • 2 C Whole Milk
  • 1 and 1/3 TBS Cornstarch
  • 3 TBS Cream Cheese
  • 1/2 C Peanut Butter
  • 1 pinch salt
  • 1 1/4 C Heavy Cream
  • 2/3 C Granulated Sugar
  • 2 TSP Corn Syrup
  • 3 TBS Honey
  • 3/4 C Chocolate

Directions

  1. Mix 2 TBS milk with cornstarch and set aside.
  2. In a large bowl mix together cream cheese, peanut butter, and salt.
  3. In a large pot (I used an 6 quart pot) boil the remaining milk, cream, sugar, corn syrup and honey. This will froth up A LOT so make sure to watch it and use a large pot. Once it boils let it continue to boil for 4 minutes.
  4. Remove from heat to stir in the cornstarch mixture then return to heat and cook for 2-3 more minutes until it has thickened a little.
  5. Remove from heat and chill. You can do this by pouring it into a zipper bag and submerging into ice water. Or if you are like me and don’t have ice, you can cool it with an ice pack and then throw it into the freezer once it’s no longer hot. You don’t want it to lower the temp of your freezer though. I chilled mine in the freezer for 30 minutes but if you use the ice bath I would leave it for an hour and replace the ice or put the whole thing in the refrigerator. You can chill it longer if you need to. I have made the mixture one day and just let it cool on the counter and then kept it in the fridge until the next day.
  6. Right before you are ready to process your ice cream melt the chocolate in the microwave for 20-30 seconds on high until the it is 80% melted and then stir to finish melting the rest. Set aside so it cools but is still liquid.
  7. Snip off a corner of the plastic bag and process your ice cream according to your ice cream maker’s instructions. If you’re looking for an ice cream maker. I LOVE my kitchen aid attachment. My hands always get really sticky during this step regardless how careful I am. I make sure to have some Clorox Wipes close by opened and easy to pull out.
  8. Once your ice cream has reach the proper consistency pour in your chocolate. This part is REALLY messy. Just embrace it, lick your fingers, and keep the wipes accessible. Ideally you’d drizzle your chocolate in while it is churning but I find it easier to stop it and drizzle some. Start churning. Stop drizzle some more and repeat until it’s incorporated. The cold ice cream will freeze the melted chocolate into super yummy flakes.
  9. Scoop into a freezer friendly container and chill preferably overnight but at least 4 hours.

Put treats in a cupcake pan for an easy DIY ice cream toppings bar.

Invite some people you love over for a fun ice cream treat! For extra you can use a half sized cupcake pan filled up with some goodies (I did coconut flakes, mini chocolate chips, gummy bears, chocolate sauce, butterscotch sauce, and toffee peanuts) to create a DIY toppings bar. The kids loved their summer evening, midweek ice cream picnic. I have to admit I liked it too!

This simple blueberry muffin recipe is so good your whole family will fall in love. I have made it with both fresh and frozen blueberries and both work equally well. They are perfect for lazy weekend mornings and if you’re lucky enough to have leftover they make a great weekday breakfast!

Best Blueberry Muffin Recipe with Streusel Topping

Muffin Batter

  • 1 1/2 C Flour
  • 3/4 C sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1/3 C oil
  • 1/3 C milk
  • 1 C blueberries (fresh or frozen)

Mix the first group of ingredients. In a separate bowl combine the wet ingredients. Combine with 10 strokes being careful not to over mix. Pour into muffin tins.

Streusel Topping

  • 1/2 C Brown sugar
  • 1/4 C flour
  • 1 1/2 tsp cinnamon
  • 1/4 C cold butter

Combine the dry ingredients. Cut in the cold butter. Spoon on top of the muffin batter. Bake muffins at 400F for 20-25 minutes. Makes one dozen muffins.

I love how quickly this recipe comes together it’s fabulous for a fun weekend treat but nice enough to add to your brunch menu when entertaining. They also reheat wonderfully! Oh man I think I’m going to have to make a batch of these soon.
