S’mores Mini Donut Recipe

Easy mini S'mores Donut recipe

You guys know I’m a donut lover. If you follow me on Instagram you’ll often see me indulging in the delicious mini donuts from Art City Donut Truck but if you don’t have one near you can make yummy mini donuts at home.  Today I have yummy and S’Mores Mini Donuts Recipe. If you’ve never tried making donuts at home before they are surprisingly easy and the flavor of a freshly fried warm donut cannot be beat.

Fool proof mini donut recipe

Basic Donut Recipe

  • 2 1/4 tsp yeast (or 1 packet)
  • 2 TBS warm water
  • 3/4 C lukewarm milk
  • 1/4 C sugar
  • 1/2 tsp salt
  • 1 egg
  • 3 tsp shortening
  • 2 1/2 C AP flour
  • Oil for frying
  1. In a large bowl proof the yeast by sprinkling over warm water and letting sit for 5 minutes or more. Yeast should be foamy. If it’s not foamy your yeast might be too old or your water might have been too hot and killed them.
  2. Add  milk, sugar, salt, egg, shortening, and 1.5 C flour. Mix on low. Slowly add in flour 1/2 a cup at a time until your dough starts to pull away from the sides of the mixing bowl. Knead for a few more minutes.
  3. Turn dough out spray the bowl with spray oil and put the dough back in the bowl covered to rise. Set in a warm place until it doubles in size. You can speed up the rising process by sticking it in the oven with the light on and a bowl of warm water and the oven door closed (but not on).
  4. Next turn the dough out onto a floured surface. For mini donuts roll the dough to about 1/4 inch thickness. For regular donuts use 1/2 inch thickness. Then cut with a donut cutter like this one.
  5. Heat oil to 300 F and fry donuts flipping to get both sides golden. Pay attention they will fry up fast!
  6. While they are still warm glaze and top the donuts and serve

S’mores Glaze

  • Marshmallow Fluff
  • Chocolate Chips
  • Graham Crackers

Mix the Marshmallow fluff with some water and microwave. I just did a heaping tablespoon of fluff to a couple tablespoons of water and stirred. Melt the chocolate in the microwave in 30 second increments until they are 80% melted and then stir to finish melting completely. Break up some graham crackers.super yummy smores donuts recipe

To glaze the donuts dunk the warm donuts in the marshmallow mixture and then top with the melted chocolate and graham cracker crumbs. Super easy and SUPER tasty.

Sew Our Stash: In Disguise

This month’s theme for Sew Our Stash was In Disguise. I’m super excited about my creation. While MY OWN costume is done I didn’t QUITE finish the boys’ costumes that go along with mine so I’ll have to do a full family costume post but you’ll get a peek at the whole group any ways.

Do you know what we’re dressed up as? No not Adam and Eve, but close. Have you heard of the ridiculous show on the Discovery Channel called Naked and Afraid? The concept sounds so dumb (two strangers stranded in really rough survival conditions…naked) but once you start watching you get drawn in. No really it just happens. I told my husband it sounded so so stupid but it was on one day and somehow I got sucked in. So Daniel and I are the “survivalists” as they call them. And Teddy is the predator, in this case the crocodile.

They blur out the privates which for girls means boobs and crotch area. So to do that I sewed some tulle on my Hey June pattern Lane Raglan (that pattern is one of my favs!). For the leggins I used the base from the Hey June Sloan Leggings but just used an elastic waist instead of the fancy waistband in the pattern.

The “microphone” is just a bead on thread, I need to run to the craft store to get proper cording before Halloween. And the bag is just a slopped together tote out of burlap. Both of those items are given to every survivalist on the show.

Isn’t he the cutest crocodile ever. Er umm tail-less croc? Yeah I totally forgot to make his tail eep so that will happen tomorrow.

Costumes are my very favorite thing to sew! Even after sewing hundreds every September and October once I get all my shop orders out I’m excited to sew our family costumes. The costumes for the nieces turned out SUPER great. I can’t wait to share them. Make sure you check in on my instagram for a peek since I’ll have them up there first :)

Halloween Oreo Cheesecake Recipe

I adore Halloween and what’s better than Oreo Cheesecakes. This mini oreo cheesecake is super yummy and a faster version of my knock off cheesecake factory recipe.

Now a days there are LOADS of types of oreos year around but when I was little I only really remember the Halloween ones with their bright orange frosting so for me they will always hold a special place in my heart. These cheesecakes are special since each one has both a full cookie in it as well as the crumble on top.

Mini cheesecake recipe

Recipe

  • 1 block cream cheese (room temperature)
  • 1 egg (room temperature)
  • 1/3 can sweetened condensed milk
  • 1/3 C mini chocolate chips
  • 1/4 C sugar
  • 1 TBS lemon juice
  • 1 TBS vanilla extract
  • Halloween Oreo Cookies
  • Chocolate Topping
  1. Mix cream cheese, sweetened condensed milk, sugar, lemon juice, and vanilla until smooth and creamy.
  2. Add egg and mix on low until fully incorporated but no more (you don’t want to over mix it).
  3. Place one oreo cookie in each glass bowl or ramekin then pour the cheesecake mixture over filling the container about 2/3 of the way full.
  4. Bake at 285 for 20-30 minutes with steam. To bake with steam put a ovenproof dish with water in the oven while it’s preheating and leave in there while you bake. The cheesecake is done when the outside is set and the center is still wiggly.
  5. Turn off the oven and leave the cheesecake in the oven with the door closed and allow to cool.
  6. Refrigerate for at few hours.
  7. Right before serving top with chopped oreos and a drizzle of chocolate topping.

30 Minute EASY Blanket Tutorial

My go to blanket tutorial. Perfect DIY gift and easy sewing project.

There is something wonderful about a handmade blanket. Today I’m excited to share what I believe is the perfect blanket tutorial. It’s fast, it’s easy and the result is is a snuggle-able blanket that’s wonderfully cozy and just the right level of warmth.

I’m excited to be joining Kimbo from A Girl and A Glue Gun as well as a bunch of other bloggers who will be sharing handmade blanket tutorials as a part of Luke’s Love project. This blanket can be made in any size you like but today I’m sharing a personal sized blanket that I think is great for elementary aged children through adults. Want one that is perfect for sharing? Check out my tutorial for a family sized blanket.

Great easy and fast DIY blanket tutorial. Perfect project for beginners or easy handmade gifts.

What You Need

  • 1.5 yards Fleece (about 54×60 inches)
  • 6.5 yards Double Bias Tape (or fabric to make bias tape and a bias tape maker)

A word about fabric. Most fleece is about 60 inches don’t worry if yours is a little bigger or smaller. It’s a snuggly blanket not a tailored bathing suit. I especially like the “snuggle fleece” or “anti-pill fleece” which is just a little extra cuddly and doesn’t pill up. If your fabric has a selvage edge just trim that off before you start. You can either round the corners so you don’t have to deal with corners or you can tuck the edges under to form a little triangle when you get to the corner. To round the corner just place a bow on the edge as a cutting guide. See how to round the edges in this post.

What To Do

  1. If you are making your bias tape do that. I LOVE my bias tape maker. I don’t actually cut the fabric on the bias for blankets like this and it works fine. Otherwise sew the short ends of your bias tape together right sides together so you have a long length about 6.5 yards long.
  2. Sandwich your fleece in between your bias tape. Feel free to pin if that’s your thing but I just kinda sandwich and hold as I go.
  3. Now zig zag the bias tape down. I like to use a zig zag stitch since it’s forgiving if your fabric slips a bit so it catches a wider area but you can really use any stitch you like including fun decorative stiches. You just want to make sure you’re catching all three layers (top bias tape fold, fleece, and bottom bias tape fold).
  4. If you cut curves you’ just go all the way around. If you have corners fold them under to make the corner triangle and continue sewing on the next side.
  5. When you get to where you started (I like to start on a straight side (NOT a corner or curve) then fold under some of the bias tape and sew a bit over where you started making sure to back stitch.

Super easy right? And these are really our FAVORITE blankets. My husband still snuggles up with our huge Christmas one since it’s so cozy (I really need to make a non-holiday one). And my nieces steal my sister’s bacon one pictured here all the time.

Teddy LOVE the Christmas one too because if you hid under it and look up it’s like the decorations are glowing. Some how the single layer of fleece is just the perfect warmth. It’s great on it’s own magically being warm enough if it’s right up against you during most of the year but even when it gets extra cold it’s just right for snugglying or layering with other blankets!

My new favorite weekday dinner recipe. 10 Minute buffalo chicken one pot pasta. So fast and so yummy.

This time of year I am SO crunched for time that even my normal speedy 30 minute meals seem to eat away time that I just don’t have. With my busy season I’m sad to report that I’ve been picking up food and eating out way too much. I just get so busy that really only super easy meals are the only kinds that will have a chance of being made. So I’m super excited to share this 10 Minute One Pot Buffalo Chicken Pasta Recipe. #EverydayEffortless #CollectiveBias

10 minute one pot buffalo chicken pasta recipe

For me it’s not so much how long the food takes to make, although that does play a part. But in addition to the making of the food there is the cleaning of the dishes. And anyone that knows me knows that I HATE DOING DISHES.

Pronto Pasta and Tyson Ready Chicken

Honestly I’m not sure why I’ve never tired to convert my recipes into one pot creations before. I just recently discovered Barilla Pronto pasta which is magical no drain stuff. You just throw it in a pan with water and in 10 minutes it’s ready to go.  No waiting for water to boil and draining and all of that. And it tastes just like traditional pasta, told you magical. I combined that with the full cooked 98% fat free Tyson Grilled and Ready chicken breast strips and that made it so this dish came together in just about 10 minutes.

Even with all my costume sewing this time of year I can certainly manage 10 minutes and clean one pot. I feel like I had an epiphany while I was making this dinner. How on earth had I never tired these time saving products? Really if you know me in the real world or have just been around for a while you know I just crazy busy this time of year with all my costume orders.

Most years our dinners fall by the wayside and we eat fast junk or out which isn’t fast and adds up. Any ways I know I’m not the only one that has busy times so I thought I’d share since I can already tell this is going to be a lifesaver for me.

  • 6 oz Barilla Pronto Pasta (I used spaghetti but any kind will work)
  • 2 C Water
  • 1-1 1/2 C Milk
  • 2 TBS Butter
  • 2 TBS Flour
  • 2 oz Cheese (I like Havarti but any neutral cheese works)
  • 1/4-1/2 C Blue Cheese crumbles
  • 1/4 tsp Onion Powder
  • Salt and Pepper to Taste
  • Tyson Grilled and Ready Chicken Strips
  • Buffalo Sauce

This is SO good and easy. Fast chicken dinner pasta recipe

  1. Start by adding the pasta and water to a cold pan.
  2. Turn on heat and boil for about 10 minutes. When most of the water is absorbed add in the butter and flour and stir.
  3. Then gradually add in the milk and cheeses to form the sauce.
  4. Season with onion powder and salt and pepper.
  5. If the chicken is still frozen thaw/heat in microwave while pasta is cooking.
  6. Place on top of the pasta and drizzle with buffalo sauce to your family’s preferences.
  7. Serve with some celery and garlic bread for a complete meal.

What to Eat at Universal Orlando and The Wizarding World of Harry Potter

A great vacation requires great food. For those of you who follow me on Instagram you know my family is all about yummy food. So I’m super excited to share my top picks of what to eat when you’re visiting Universal Studios in Orlando, Florida.

As I mentioned last week in my tour of the Wizarding World of Harry Potter we had a complete blast visiting the area and theme parks so today I’m sharing my favorite foods to make YOUR next trip to Universal Orlando the most delicious it can be.

What to eat at Universal Orlando - Frozen butterbeer at the wizarding world of harry potter and the three broomsticks

1. Butterbeer, Butterbeer, Butterbeer!

If you do one thing food-wise when you visit please please please buy yourself a Butterbeer (or two or three). This is a non-alcoholic drink that is absolutely delicious. It’s like a butterscotchy-y cream soda.

It comes both in the regular drink variety which is a very tasty carbonated bit of yumminess.

And in a frozen version. My sister and husband are adamant that they prefer the frozen kind. If you have to pick one I would say go for the frozen kind.

But that being said I think I like both the regular one just as much as the frozen one. It kinda depends on my mood. We had Butterbeer every day we were there.

To me it’s like gelato in Italy you just have to do it and as often as possible!

2. Lombard’s Seafood Grille

Fashioned after the famous San Francisco eatery this was hands down MY favorite place we ate the whole time we were in Orlando. And crazy enough it was in the theme park. Everything we had was very tasty. The portions were generous and it was really nice to take a break from the fast pace of the amusement park and sit down to a restaurant meal.

In fact I loved the food so much that I almost went back in the same day. Unfortunately they were closed when it was dinner time since the park was closing shortly. We had the Fisherman’s Basket which was a fried seafood lover’s dream.

The clam chowder which was so tasty I had to resist gobbling it down since I bought that for Teddy (he also highly approved). And my sister ordered the Lobster and Corn Bisque which was just as yummy as it was stunning.

But my biggest regret was not stealing a bit of my mom and dad’s seafood pot pie . They said it was so good and were raving about it later and boy did it look amazing. The prices were very reasonable and we were able to share stuff and feel satisfied. I would definitely go back (in fact I wish I could go back now) you can see the whole menu here.

3. The Simpson’s Fast Food Boulevard

If you’re looking for something a little faster you can go through the cafeteria style lines of Fast Food Boulevard with all your The Simpson show inspired favorites that’s sure to have something for everyone in your group. We couldn’t resist trying the Chicken and Waffle Sandwich which was topped with a tasty maple syrup mayo.

The kids were feeling the pizza and baby boy goggled his portion down. There are lots of other options like fried fish, burgers and hot dogs. But you can’t get out of there without trying the iconic Lard Lad donut. It’s massive and surprisingly yummy. And you know from my instagram feed that we are donut connoisseurs. 4. The Leaky Cauldron

Harry Potter fans can’t miss the opportunities to eat in one of the wizard themed eateries. We decided on The Leaky Cauldron and it was great. It was SO fun to sit in there and dine. Also for a sit down restaurant they are surprisingly fast at serving you. It takes a while to get through the line to order but once we did our food came fast.

Our favorite by far was the Toad in the Hole. It was unique but also super tasty. We also had the Beef, Lamb, and Guiness Stew pictured above but we didn’t love that. The bread was a bit dry but it wasn’t bad.

The sticky toffee puddings was very yummy almost a cake version of butterbeer.

I was super impressed with the portion size of the Bangers and Mash and I really liked the taste of those as well but ever since my Summer in Oxford I’ve had a soft spot for Banges and Mash.

 5. Cowfish at Universal CityWalk

In the park isn’t the only place to eat. Universal is split into two theme parks that’s connected with CityWalk (a row of shops and restaurants) on the outside and the Hogwart’s Express on the inside. It’s just as easy to step outside the gates to grab a bite and I’m so glad we were able to try out Cowfish.

The eatery get’s it’s name since they serve both burgers and sushi. Super fun right? We had the Crab Rangoon Dip, Parmesan Bacon Truffle Fries, Boursin Bacon Burger, Spicy Yellow Tail Roll, the Prime Time Filet and Lobster (sushi) roll, and the High Class Hill Billy (pictured here). It was all very tasty.

But the thing I was most impressed with were the kid’s meals. We almost never order kid’s meals because honestly it’s almost always fake dumbed down food that isn’t that flavorful put there on the assumption that kids on’t eat real food. That was NOT the case here. There were really good options with real food that was both healthy and fun. For Teddy we picked the Shrimp Tempura meal which came with a shrimp tempura roll and choice of sides (we could have also had apple slices or edamame) and it had the cutest rice krispie sushi. He scarfed it down!

6. Bubba Gump at Universal CityWalk

Another good option in CityWalk is Bubba Gumps. If you like fried seafood (or seafood of any kind) this is a treat. Our waiter was awesome quizzing us on Forest Gump trivia while also tending to our tummies’ needs.

I’m always a sucker for friend shrimp and the Shrimper’s Heaven did not disappoint. But I think my favorites were a tie between Lt. Dan’s Drunken Shrimp (pictured above) or Jenny’s Catch with Lobster Butter Sauce (pictured right here). Oh man it they were SO good. The portions were very generous so we were happily stuffed just sharing a few dishes. See the full menu here.

7. Bula Bar and Grille at the Royal Pacific Resort

We had the pleasure of staying at Loews Royal Pacific Resort during the Family Forward retreat with Mom It Forward and the first day we were there we camped out by the amazing pool (more on that in a different post). But I was VERY impressed by the poolside food options. Not only were they super yummy but the portions were giant making them very sharable and a great bang for your buck. We tried the burger and yummy chicken sandwich both which came which a geneorus portion of fries.

The kids meals were equally as big and tasty. And of course how can you pass up a poolside frozen daiquiri?

8. Pumpkin Juice

Butterbeer get’s all the fame but if you are a fan of pumpkin stuff (like my husband) then you’ll want to grab yourself one of these. The pumpkin juice comes in the cutest bottle (yes I brought it home). It’s like a yummy refreshing spiced thin juice that tastes like fall in a bottle.

9. Florean Fortescue’s Ice Cream Parlour

And last but not least I highly highly recommend the delicious ice cream from Florean Frotescue’s in Diagon Alley. This is your chance to try butterbeer in yet another form -soft serve ice cream. I’m not going to lie that butterbeer cone my sister and nieces got was DELISH.

But I was happy with the flavors I picked to share with the hubby -Salted Caramel Blondie (one of their best sellers so suuuuuuppppper yummy flavors) and Apple Crumble.
