Buttermilk Blueberry and Cheese Pancakes

Ingredients

flour

tsp
salt

TBS
sugar

tsp
baking powder
1/2
tsp
baking soda
1
C
buttermilk
or 1 C milk with 1 TBS lemon juice allowed to sit for 5 minutes before use
1
egg
1
TBS
vegetable oil
1
C
blueberries
1
C
sharp cheese
optional
Instructions
Mix the dry ingredients. In a separate bowl whisk together the wet ingredients. Combine blueberries, wet and dry ingredients and mix 10-12 strokes.
DO NOT OVER MIX. It should still be lumpy when you are done with 10 Strokes.
Cook over medium heat add cheese if desired. Flip when you start to see holes forming.
