Blueberry Cheese Buttermilk Pancake

Buttermilk Blueberry and Cheese Pancakes

A unique twist on the traditional blueberry pancake breakfast

Ingredients 

  • 1 C flour
  • 1 tsp salt
  • 1 TBS sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 C buttermilk or 1 C milk with 1 TBS lemon juice allowed to sit for 5 minutes before use
  • 1 egg
  • 1 TBS vegetable oil
  • 1 C blueberries
  • 1 C sharp cheese optional

Instructions

  • Mix the dry ingredients. In a separate bowl whisk together the wet ingredients. Combine blueberries, wet and dry ingredients and mix 10-12 strokes.
  • DO NOT OVER MIX. It should still be lumpy when you are done with 10 Strokes.
  • Cook over medium heat add cheese if desired. Flip when you start to see holes forming.
