Crock Pot Beef Onion Wine Sauce

Crock pot beef in onion wine sauce recipe is so easy and delicious it makes a great weeknight meal and there are 2 bonus recipes for using the leftovers.

Ingredients 

  • 2 lbs Beef Stew Meat 1 inch cubes
  • 1/2 onion coarsely chopped
  • 1 envelop onion soup mix
  • 3 TBS cornstarch
  • Salt and Pepper to taste usually I don’t need any
  • 1 1/2 C Red Wine
  • Egg Noodles for serving

Instructions

  • Place all ingredients (except for the egg noodles) into the crock pot and stir.
  • Cover and cook on high for 5-6 hours or low for 10-12 hours.
  • Serve over cooked pasta

Notes

So insanely easy and so yummy! As a bonus, if you happen to have leftovers you can use them in lots of ways.
One of my favorites is to add some sour cream and mushrooms (and a little beef broth if you need to thin it out) and you’ve got a super easy Beef Stroganoff!
I’ve also thrown it in to packaged ramen for a flavor boost and yummy soupy noodle twist! Gotta love a meal prep that can pull double (or even triple) duty right?
INSTANT POT DIRECTIONS
You do need to make some adjustments though since the alcohol won't cook off in the sealed pressure cooker. So to start off put the Instant Pot on sauté and and boil 1/2 Cup wine for a few minutes now add 1 C beef broth while still on sautéed and scrap the bottom to loosen anything that may have thickened.
Turn off sauté. Without stirring add in the beef cubes and onion and then top with the onion soup seasoning. Cook on high pressure for 50 minutes use a natural release.
Once the pressure has come down you can add your pasta in try to get it on the bottom and put the meat on top cook for 2 minutes with a quick release. If it needs to soften up a bit heat on sauté. At this point if you want the sauce thicker you can mix cornstarch with some water to make a slurry.
