3Zucchinis
2Cans Garbonzo Beansrinsed and drained
2-5TBSOlive Oil
2TBSLemon Juice
1bunch green onions chopped
Garlic Salt to taste
1Chicken Breastchopped (optional)
Instructions
Cut zucchinis into bite sized pieces, saute and season with garlic salt. Set aside
Combine quinoa, cous cous, water and 2 TBS olive oil in a microwave proof container. Microwave on high for 6 minutes covered. Allow to stand 5 minutes then fluff with a fork.
Mix the remaining ingredients together and add olive oil and garlic salt to desired taste and texture.
