Oatmeal Banana Bread Recipe

This delicious and easy moist oatmeal banana bread recipe is filled with oats and cinnamon chips making a perfect breakfast, snack or treat.

Ingredients 

  • ¾ cup Granulated Sugar
  • ½ cup Salted Butter
  • 1 cup Mashed Bananas (about 2 bananas)
  • ½ cup Greek Yogurt
  • 2 Eggs
  • 1 ½ cup All purpose flour
  • ¾ cup Oats (old fashioned rolled oats)
  • 1 tsp. Baking soda
  • ¼ tsp. Salt
  • ½ cup Cinnamon Chips
  • ¼ cup Butterscotch Chips
  • ¼ cup Chocolate Chips (optional)

Instructions

  • Step 1: Preheat the oven to 350F. Set the oven to preheat while you start making the bread.
  • Step 2: Cream the sugar and butter. This is where you're standing mixer or your hand mixer will come into play. You'll put the butter and the sugar both in the bowl and mix them together with the mixer until they're evenly blended.
  • Step 3: Mix in the banana, sour cream, eggs, flour, oats, baking soda and salt. Mix everything in little bit by little bit as the mixer is still turning. If you mix it in too fast, some of the ingredients could splash out. You will continue to mix it all together until it is evenly blended.
  • Step 4: Stir in the chips if you are using them. If you are using the chips, you will slowly dump them in as the mixer continues to mix.
  • Step 5: Pour into the baking dish and bake until a toothpick comes out clean, about 60-80 minutes. If the toothpick comes out still very gooey, then you know it's safe to leave it in for another 15 minutes without checking. If it comes out almost clean, you will want to check it every 5 minutes or so to see if it's done.

Notes

Substitutions
You can swap sour cream for the Greek yogurt if you prefer. I usually use 2% Greek yogurt but have also made this with light, full fat sour cream and fat free Greek yogurt. 
Feel free to leave the chips out if you want but I believe the cinnamon chips really take this over the top.
