Recipe: Buttermilk Blueberry and Cheese Pancakes

I’m not a big breakfast person but I love blueberry pancakes.There was a crazy sale on them at our local grocery store so I bought a couple cartons and after getting a little tired of popping them as snacks I decided it was time for some pancakes.

I usually half this recipe for just the musicmaker and I. I half the egg by beating an egg with a fork and then pouring half into the mixing bowl and saving the other half for something else.

Ingredients

1 C flour
1 tsp salt
1 TBS sugar
2 tsp baking powder
1/2 tsp baking soda

1 C buttermilk (or 1 C milk with 1 TBS lemon juice allowed to sit for 5 minutes before use)
1 egg
1 TBS vegetable oil

1 C blueberries
1 C sharp cheese (optional)

What to Do

Mix the dry ingredients. In a separate bowl whisk together the wet ingredients. Combine blueberries, wet and dry ingredients and mix 10-12 strokes.

DO NOT OVER MIX. It should still be lumpy when you are done with 10 Strokes.

Cook over medium heat add cheese if desired. Flip when you start to see holes forming.

Yum yum yum. And if you’re feeling extra fancy they’d be super delish with some whipped cream and an extra handful of fresh berries for the top.
