What’s For Dinner Weekly Menu

This is SO good! Quick and easy seafood mac and cheese recipe perfect for kids and grown ups

I’ve decided to bring my weekly menu posts back. Every week I send my menu for the upcoming week out in my newsletter (subscribe here). So I’ve fallen off a bit about posting it here but I’ve decided to jump back on the wagon. Also I’m working on cataloging all my old What’s For Dinner posts (over 200) so that you have an easy archieve of realistic weekly menus.

But for now here’s what’s on the menu this week. And don’t forget to check back in on Instagram to see if I stuck to it ;) Okay sometimes I switch around days and somethings I just decide I need to eat out but writing these plans really helps me to make more of our meals at home and keep our eating in check.

I’ve included links to the recipes included if available.

What’s For Dinner

Spicy chorizo chili

After my great experience with the Sunbasket and my last Sew Our Stash creation which I loved but was definitely tighter than it should be I’ve decided I reeeeeeeaalllly need to get my eating into action. I think I have two main downfalls.

First we’ve started eating out A LOT. Not just dinners, we’ve gotten kinda bad. There have been days I’ve eaten out 3 times eep! And as much as I really do like eating out it’s getting expensive and we’re getting fat. So I want to get back on the meal planning schedule. And I think ever once in a while I’ll probably order a Sunbasket because I really liked that whole thing. If you’re curious about it my write has lots of info, there is a great deal to try it for the first week for only 5$ a meal, and my giveaway for a free week is still going on. But all that’s to say is I need a plan.

My second eating issue I have is snacking. I’m a stress eater and I lately I just find myself reaching for the snacks. Nothing huge is going on just the normal juggle. But I’ve started having a snack while Teddy naps and then late at night ack. Not only is it a snack but they have been meal sized snacks! The worst part is I’m not even hungry. So yes I want to try a plan. I’m going to write it out once again!

  • Egg and English Muffin
  • Coconut Greek yogurt and Almonds

  • Trader Joe’s Shrimp Nuggets (I’m obsessed)
  • Quesadillas
  • Pigs in a Blanket

Apparently I need help with breakfast and lunch ideas. What do you guys eat?

What’s For Dinner: Pi Day Edition

Pi Day Menu a full day's worth of delicious pies

Oh my goodness we had a delicious Pi Day this year! Seriously it was divine. It was a day long feast and it was soooooo good. The day started with a brunch consisting of my mom’s yummy spinach and bacon quiche and my sisters scrumptious mini pie pops filled with berry jam and chocolate. Dinner was a killer chicken pot pie which my niece declared was “the best thing I’ve ever eaten”. The rest of us pretty much agreed, it was crazy good. I’ll have to get her to share her recipe so I can blog it because my mouth is watering just thinking about it. My contribution was this super good Raspberry Chiffon Pie. It’s one of my favorite recipes that I shared AGES ago but the pictures were kind of crummy on the post. I retook them so I should be able to update the pictures soon but I’m to tired right now so there’s just one new pic :) So that was last week here’s

 DIY Pi Day Shirts

Of course we had to make some Pi Day shirts since it was more than just 3.14 this year it was the day of the century don’t you know! I used my Cricut Explore and my favorite iron-on vinyl technique, so easy and fast.

What’s For Dinner

Chicken Artichoke Alfredo pasta recipe

Let’s figure out what’s for dinner and get back on track to eating better shall we? Today I went to put on my “fat jeans” since I wanted to be comfy and low and behold they are tight eep yeah that’s not okay. I’m sure a lot of it is due to our eating out addiction we’ve just gotten carried away. I think we always are going to eat out some but seriously guys it’s been almost daily if not multiple times a day in the past few months. Yeah I know! So here goes back on the meal planning

Snow Rose Cookies Tutorial

How to make super easy President Snow roses. Great for Hunger Games parties. Or leave off the "blood" for cute roses - Rae Gun Ramblings

Did you guys go see the movie?! What did you think? I am being a good sister and waiting until my sister can go so I have not seen it yet but I can’t wait. I’m still celebrating the Hunger Games movie release though so today I present to you President Snow’s Rose Cookies Recipe. It’s so easy and of course you can do them in other colors for fun parties, how cute would they be for a spring luncheon or shower!

The trick to making gorgeous roses out of frosting - Rae Gun Ramblings

I thought about putting them on pops like my mermaid cookie pops and attaching a few leaves but I thought I’d keep it simple today and just do the basic cookies. They are really SO easy to do all you need is the right tip. I’ve shared how to make rosettes with frosting before with my chocolate rose ganache cupcakes but since it’s been a while since I share those I thought I’d go over it again!

Step by step instructions on how to make perfect roses out of frosting - Rae Gun Ramblings

What You Need

  • Basic Sugar Cookies
  • 2D Wilton Tip and Pastry bag
  • Frosting (I just used the stuff in the tub)

What to Do

  1. Once your cookies are baked and cooled scoop about 1 C of frosting into your pastry bag with the tip attached.
  2. Hold the bag perpendicular to the cookie and starting in the middle squeeze and piped around in a circle. The key is to keep the bag always upright. You don’t want it tilted or to turn it at all. You hold the bag perpendicular the whole the the only movements is drawing the circle.
  3. When  you reach the edge pull it downward to break off the frosting.

Easy Rose Cookies Tutorial - Rae Gun Ramblings

So easy right. Once you try it you’ll become addicted and you’ll want to put roses on everything! Perfect for Hunger Games parties, President Snow inspired cookies - Rae Gun Ramblings Now if you want to be silly and put some “blood” on your rose for our favorite evil President, just stir in some red food coloring to a little of the frosting and then place  a few drops of the dyed frosting on your roses.

What’s For Dinner: Back in the Saddle

Bacon Brussels Sprouts - Rae Gun Ramblings

I’ve finally started cooking again. Between adjusting to life with Teddy and then the craziness of my Halloween orders it’s been FOREVER but I missed my weekly menu planning so I decided to bring it back.

My nieces are really into the show Chopped and watching it with them has really convicted me over how much we eat out. If you’ve never seen the show the contestants are given random (oftentimes undesirable ingredients) that they have 30 minutes to make a dish using the ingredients. The thing is everything always looks delicious. I figured if they can make something with their crazy ingredients than I should be able to make stuff with my whole fridge, pantry, and second freezer full of stuff. Am I right? I think something that will help me is that when I write up these plans I’m only allowed to put stuff that I have all the ingredients on hand to make

Day Meal
Saturday Raspberry Chicken Salad
Sunday Butternut Soup and Fancy Grilled Cheese
Monday Salmon with Ravioli
Tuesday Seafood Pot Pie
Wednesday Cheater Navajo Tacos
Thursday Eat Out
Friday  Kielbasa and Roasted Veggies

What's for Dinner weekly menu and recap at Rae Gun Ramblings

And I also thought it would be fun to share what I actually ate, you know if I can remember to take a picture.

  • Top two Thai food from Chanon Thai to celebrate Loy Kratong
  • MacCool’s Irish Pub can’t pass up half price appetizers on Tuesday nights!
  • Chicken Artichoke Sausage, Garlic Mashed Potatoes and Bacon Brussels Sprouts (I cooked!)
  • Delicious Focaccia that Heidi made, my sister smoked and grilled I contributed a salad and brownies. All of our tummies were happy. I was too busy chowing down to take other pictures.
