I should have been a Southern Girl and I’m not sure that soCal works. I just love fried rich foods. The other day to go with some chicken and corn I whipped up these babies and they were so so good. It makes a ton, I think it would be a good snack or side for 6-8. I halved the recipe when I did it, I’ve still got half an egg sitting in the fridge.
1 C flour
1 C corn meal
1 tsp baking powder
1 small onion grated or finely chopped with juices
3-4 TBS chopped chives (not necessary but delicious)
a small pinch of salt
a splash of milk if it seems to dry
Mix it all up and drop small spoonfuls into hot oil. After browned drain on a napkin (I just test one breaking it open to see if it’s done). Sprinkle with salt to taste. Delish!
