Bacon and Cheese Croquettes Recipe

These potato, bacon and cheese croquettes I’m sharing today are SO yummy and as a bonus they are baked instead of fried. #Switch2Sourdough #collectivebias

It's a keeper. Super good potato cheese and bacon croquettes recipe. Freezes great and a great tutorial on how to make your own bread crumbs.

I’m a big fan of croquettes for every day food as well as entertaining because they are easy to make ahead of time and either finish cooking last minute or just reheat.

These ones are filled with potato bacon and cheese would be a tasty addition to any Easter or Mother’s Day brunch although I have to admit eating them because it was Monday as a good enough reason for us ;) I like using homemade breadcrumbs (directions for those below) since I can use California Goldminer Sourdough Bread which I usually have on hand for sandwiches. Also they get bonus points for their yummy flavor but also since sourdough doesn’t spike your blood sugar as much as other breads it’s one of those little swaps I like to do in my recipes these days.

Ingredients

  • 1/2 C Coarse Bread Crumbs
  • 1/2 C Flour
  • 1 Egg
  • 2 Medium Potatoes
  • 1/2 C Shredded Cheese
  • 1/4 lbs Bacon
  • 1-2 TBS Green Onions chopped
  • Salt and Pepper to taste

Love these croquettes they are a great snack or addition to brunch.

Directions

  1. Peel and boil your potatoes until tender.
  2. Cook and crumble your bacon.
  3. Combine potatoes, cheese, bacon, and green onions and mash together with a fork. Add salt and pepper to taste.
  4. Form into patties. I usually do ovals that are more flat so that they will cook faster but I have also done small balls.
  5. Prepare coating station with a bowl with the beaten egg and a separate bowl with the bread crumbs.
  6. Coat the potato forms with flour and then roll in the egg and then the bread crumbs. Repeat for all pieces.
  7. Spray generously with spray oil on both sizes and bake in a preheated oven at 450 F until golden brown about 15 minutes. Flip around the 10 minute mark.

They are so good and easy. The recipe makes about 10 small (2x3x1 inch) croquettes. They are very filling and hearty. If serving as a side you only need 1-2 pieces. The recipe can easily be increased or decreased too and they freeze great.

How to make panko bread crumbs. Great homemade breadcrumb recipe

If you don’t already know how to make homemade bread crumbs they are super easy. I think it gives it that little extra something (plus you know exactly what goes into it). I like using California Goldminer Sourdough Bread that’s baked fresh daily at Smith’s and other Kroger stores. It is a sandwich loaf that you can find in their bakery section not the bread aisle.

To make the bread crumbs lay your bread onto a cookie sheet and dry it out by baking it at 300 F for about 15 minutes. Then just pulse it in your blender or food processor until you have coarse crumbs. This is a great way to use up extra bread that you might have left over from sandwiches or recipes. I keep a bag full of bread crumbs in the freezer for easy access.

And speaking of other uses for extra bread, this weekend we had a birthday party for my star and moon obsessed little boy and my mom made the cutest (and most delicious) homemade croutons by cutting the sourdough into stars, brushing with olive olive, sprinkling with garlic salt and Italian seasoning and then baking. 10 Tips for Meal Planning Success + Parmesan Zoodles Recipe

Whether to it’s reign in the budget or to keep the calories in check I’ve found meal planning to be key to helping us eat at home. #MangiaTonight #CollectiveBias 

Great tips and tricks for family meal planning to save money and eat healthier. Reclaim family dinner.Since both of us work from home it’s a real struggle not to want to eat out every night. We want to “do” something, to make it an event but eating out daily is just too expensive. Plus I don’t know about you but I always over eat and order way more unhealthy foods than what we eat at home. And the thing is, we enjoy the food I cook and with a little thought it’s easy to make even meals at home something to look forward to. For me if I have a meal plan for the week that I have shopped for I’m WAY more likely to eat at home and stick to the plan. So today I’m sharing 10 tips for meal planning success.

1. Pay attention to the family schedule (and special events).

Each week look and think about what this week has in store for you. Are there weekly activities like the soccer or piano that will occupy your time? What time will you be getting home? How much time do you really have that day to prep dinner? Factor all of that in when you are selecting your meal for that day. Also think about if you have any special events that will change your normal schedule or that might have you eating out (whether this is grabbing a bite after being out for the evening or eating at the home of relatives).

2. Make a list or pinterest board of recipes.

I highly suggest making yourself a few pinterest boards. One for tried and true recipes that you would happily make again. You can even upload your own picture to represent a family favorite that isn’t somewhere on the internet. For example if you guys enjoy taco night, next time you have tacos snap a picture and upload it to your board so when you’re planning it’s right there in front of you. Also make at least one for recipes you want to try. I have a few including yummy savory ideas, seafood recipes, and crock pot recipes.  You can also just make yourself lists but I find pinterest is so easy since it’s visual and I’m always finding stuff I want to try throughout the week and I just pin them as I see them.

3.Take advantage of pre-made and convenience foods.

Whether you are using something like this new Bertolli Chicken Parm Bakes or even a my freezer friendly enchilada recipe that you had in your freezer, I recommend using some just heat up type of options. I found the Chicken Parmigiani Bake as well as lot of other yummy looking Bertolli frozen family dinners for a great price at Smiths.  There are so many great convenience foods these days that are just as simple as popping in the oven or heating in a skillet. I use a few every week. I like to pair them with a little something extra so for this meal I used frozen chicken parmesan that just needed to be baked as well as frozen bread dough that I let rise and I sprayed with oil and sprinkled with seasoning. Then I paired them with some basic zoodles for me and a comb of zoodles and traditional pasta for my husband and we had a delightful complete meal.

Basic Zoodles (2 serving)

  • 3-4 medium zucchini cut into noodles (see this post for how I do that)
  • Garlic Salt to taste (I do a couple good shakes)
  • Pepper to taste
  • Spray oil
  • 1 tsp butter (optional)
  • 2 tsp grated Parmesan

In a nonstick skillet (nonstick is VERY important) over medium high heat spray with oil and saute the zucchini noodles until cooked through. I like mine softer but it’s totally a matter of preference.If it’s your first time making zoodles just taste it often to see when you like it. Season with salt and pepper and transfer to your plate. Top each serving with 1 tsp grated Parmesan. Feel free to eat as is or mix with pasta noodles for more traditional pallets.

4. Try to shop once for everything you need for the week.

I found the frozen chicken Parmesan and the zucchini for this meal all at my local Smiths and tried to grab everything else I needed for the week while I was there. I know that for me if I have the ingredients, especially produce or fresh meat I’m more likely not to decide to eat out since I’m worried about them going bad. Likewise if you’re using any frozen items that will need to thaw, take them out and put them in the refrigerator the night before so you limit your excuses for the next day.

5. Be willing to be flexible

I think it’s important to assign specific meals to days since this helps me think in concrete terms about our schedule and if anything needs to be thawed or thrown in the crock pot. BUT if you get home at the end of the day and just don’t feel like what’s on the menu by all means switch for one of the other days’ meals. After all you did all your shopping already so you can easily make that swap.

6. Plan on an “eat out” or “leftovers” day.

We love eating out so I always plan in an eat out day. Sometimes it’s connected to an event and sometimes it’s just there for when we feel like we have to get out of the house or I just don’t feel like cooking that night. Likewise I know lots of people account for eating leftovers for a day or two. If you are leftover eaters (we aren’t, leftovers die a slow death in our fridge) then by all means factor that in.

7. Try to plan some double duty meals.

I like to plan means that work overtime. I think the easiest way of doing this is by making some crock pot meat early in the week and then repurposing it into a meal later in the week. It’s simple to turn a roast (or really any kind of meat) into tacos, Stroganof, enchiladas, or even soup. Another easy idea is to make a double batch of your favorite freezer friendly meals (like my Stuffed Shells or Knock off Olive Garden Zuppa Toscana) and then freeze a batch for a later week.

8. Build in diversity and make it an event.

I think one of the biggest reasons people fall off of meal planning is that they get into a rut. Make sure to try new things. This is where those pinterest boards come in handy. Just allow yourself more time when trying a recipe for the first time and I always like to serve it along size something tried and true just in case. We are huge foodies. The baby is a GREAT eater and I think a big part of that is that we make dinner an event. We look forward to it, we all eat the same thing, we talk about the food, and of course we try to make everything we eat and serve our little one delicious. When you’re busy it’s easy to just forget to value meal time so that is a perfect oppertunity to use the pre-made stuff like the chicken Parmesan in these pictures or a previously homemade dish. That way you can really focus on a whole meal and time together and enjoy the food!

9. Keep your eyes on the goal.

Remember how much you will save. By eating at home even if you’re very spendy with ingredient you’ll save tons of money over eating out even if eating out is just fast food. You will also be saving your health. Whether you are content with your weight or trying to cut some calories, when you do the cooking you know exactly what goes into it and you can make sure that you feed your family veggies and a balance of nutrients. Also with the crazy serving sizes at restaurants these days is SO hard not to over eat even if you’re sure the particular foods are good options.

10. Write it down.

Last but most importantly write it down. Every week I sit down at the computer and write out my weekly menu. I actually send it out in my newsletters with links to the recipes on Thursdays this helps me to stay accountable and it’s just fun to share. When I’m at the store I pull it up on my phone. A lot of times I write my list on good old paper since I’m totally a paper and pen girl. I even made these meal planning printable that you can use as well. Sometimes I’ll snap a photo of my plan and share it on Instagram. People love it. Whether you want to be public or not you should definitely write down your meal plan. Personally I highly recommend sharing it with someone even if that is just someone in your household, but really I bet your friends would love to see it on social media typed up or as a pic!

20 Minute Creamy Shrimp Pesto Zoodles Recipe

Have you had zucchini noodles also known as zoodles? For me it was seriously love at first bite.

This is a keeper. Made it tonight and it's SO good. One pot zucchini noodle (zoodle) creamy pesto shrimp recipe. Fast so it's perfect for healthy light weekday dinners and tastes great.

I totally “borrowed” my sister’s zoodle maker 6 months ago and refuse to give it back. It’s so freaking cheap though I should probably buy my own. But I digress. Zoodles are sooooo good and if you are trying to lose weight or eat healthier or have this be “the year of your best body” bwahaha have you seen that commercial? then you need these in your life.

20 minute light and healthy creamy pesto shrimp zucchini noodles AKA zoodles recipe

This 20 minute creamy shrimp pesto zoodles recipes is my weeknight go to when I want something satisfying but light. It is SO yummy and easy to put together you gotta try it. If you have zucchini haters or non-zoodle lovers you can do what I do which is cook up some pasta (these noodles make it super speedy) and just give them mostly traditional empty calorie wheat noodles and make yours with the zoodles or half and half is good too.

Really it’s super easy to customize. I still make the noodle eaters have some of the zucchini though and it makes everyone get more veggies even if they don’t want a heaping plate of them like I do. Okay lets get to the recipe.

So glad I tried this. Super yummy low calorie and filling zoodle zucchini noodle recipe. With creamy pesto and shrimp sauce. Fast and great for weeknight dinners or lunch

Ingredients

  • 4-5 Medium Zucchini (if you want half to be pasta I do 2-3 zuccs and 2 oz pasta)
  • 1/4 C Pesto
  • 1/8 C-1/4C Heavy Cream
  • Salt and peper to taste
  • 1/4 tsp onion powder
  • 16-20 Shrimp (I’ve used both cooked and raw tail on)

Directions

  1. Season shrimp with salt, pepper and onion powder. If the shrimp is already cooked set aside.
  2. If your shrimp is raw cook them until ALMOST done in a NONSTICK (this is important) pan that is heated up and sprayed with a good amount of spray oil like Pam. Remove from heat and set aside. If you have tail on shrimp cook them with the tails on this will give them better flavor. Once cooked discard the tails.
  3. Make your zoodles. Cut the round end off of the zucchini and with and use the stem part as a handle. If you have this zoodle maker this step will go super fast. Like just a couple minutes max.
  4. Then in the pan you cooked the shrimp on. Make sure it is hot and resprayed add in the noodles. When they are close to your desired texture (some people like them more soft and others with a snap) this will only take a few minutes over medium high heat, turn off the heat.
  5. Add in pesto and cream and stir. Add as the cream to your desired consistency. If you are spitting this with regular noodles. Make sure your noodles are cooked before you start step 4. I like pronto noodles when I’m in a rush. Then I just put noodles on one side of the pan and the zucchini on the other and and mix on their own sides and just a bit of overlap will happen in the middle which is fine since I want everyone to at least have some zuccs.
  6. Add back in the shrimp just to reheat. If you need to you might want to turn your heat back on just for a minute.
  7. Add any additional salt you might want.
  8. Enjoy and marvel at the fact that that delicious meal was mostly veggies and so low in calories!

World’s Best Spinach Artichoke Dip Recipe

 


You guys this spinach artichoke dip recipe is pretty much party food/appetizer perfection. Plus it’s SO easy to make! 

My new favorite party recipe. This spinach artichoke dip recipe is SO good and easy. Perfect appetizer or snack.

Chips and dip may very well be my favorite food. Seriously I love a good dip with a crunchy vehicle but I’m kinda picky. Not all dips (or chips for that matter) are created equally. But let me tell you this one right here is SO good and it can be made in the crock pot if you want.

The best spinach and artichoke dip recipe I have ever had. Only takes 15 minutes and the recipe is crock pot friendly (but does not require a slow cooker)

Ingredients

  • 8 oz light cream cheese (full fat is fine but I used light)
  • 16 oz light sour cream (same you can use full fat if you want)
  • 1 stick (1/2 C) butter
  • 10 oz frozen chopped spinach, thawed and squeezed to remove excess liquid
  • 14 oz Artichoke Hearts
  • 4oz diced chilies , mild drained (don’t worry this doesn’t make it spicy AT ALL pinky promise)
  • 1 1/2 C shredded Parmesan cheese
  • 1/4 C grated Romano cheese
  • 1 TBS chopped garlic

A quick word about the ingredients. This does not have a spicy flavor or kick to it. But the chilies do add a little something to the overall flavor. I would serve this to the most spice sensitive people without worrying. 20 month old Teddy gobbled this down without a blink. Also you could just use all Parmesan cheese but I do like the depth of flavor you get by using the Romano.

This is a keeper. Finally a spinach artichoke dip that is super delicious and takes only 15 minutes. Also crock pot compatible

What to Do

Easiest Method

  1. Chop artichokes.
  2. Drain off any excess liquid from spinach and chilies.
  3. Combine everything in crock pot and allow to heat through (about 40 minutes).

Fast Method

  1. Combine the cheeses, butter, and sour cream in a pot over medium heat until melted and combined.
  2. While the cheese is melting drain and chop the artichokes and drain any excess liquid off of the spinach.
  3. Stir the spinach, artichokes, chilies, and garlic into the cheese.
  4. Serve warm. This makes enough to fill a 2 quart crock pot.

If you are not in a hurry you could easily make this in a crock pot and save one dish to clean. Just put it on high until the cheese is all melted through and then stir and turn to low or warm.

I took this to my husband’s work Christmas party this week and it was devoured fast.

Recipe: Lemon Wilted Spinach

I’m not shy about my constant battle with getting more veggies in my body. It’s not that I don’t like veggies it’s just I never crave them and I forget that they are in my fridge. But spinach has been good to me lately. And this is one of my favorite ways to prepare it. Not only is it delicious but it’s super fast.

You want equal amounts of butter and olive oil. For two people I wouldn’t go more than 1/2 tsp of each to start with. In fact I’ve even done it with just spray oil and that works great.  (I used too much oil in the pictures so don’t base it off of that).

Melt the butter and oil and then add 1/2 a tsp of chopped garlic until it starts to be fragrant.

Then add lots of spinach. It will cook down a ton and it’s an easy way to get a lot of veg into the meal. Using tongs or something similar move around and flip the spinach. Add salt and pepper to taste and a squeeze of fresh lemon. This step only takes a few minutes.

Serve it with your favorite protein and you’re good to go. I did mine with some rotisserie chicken and Trader Joe/s risotto and it was a super yummy and healthy dinner. I also like it a lot with salmon and cous cous. I hope you like it!
