Recipe: Double Chocolate and Cranberry Blondies

Some times you just need something sweet and easy and you don’t want to have to leave the house to get it! These Double Chocolate Cranberry Blondies are perfect for that. And even better they are totally customizable to whatever you’re craving. And as you can see below can be made in one pan for easy clean up.
  • 1 stick butter melted
  • 1 C brown sugar
  • 1 egg
  • 1 tsp vanilla or 1/2 tsp almond extract
  • 1 C flour
  • 1 pinch salt
  • 1 tsp baking powder
  • 1/2 C white chocolate chips
  • 1/2 C milk (or dark) chocolate chips
  • 1/2 C dried cranberries
  • 1/2 C nuts (optional)

First melt the butter (I do  it right there in the 8×8 dish and mix in the sugar and let cool for a couple minutes). I dump the rest in. If I’m paying attention I  try and dump the dry stuff together and mix that but really you can just stir like crazy once the butter is cool enough it won’t cook the egg. Bake at 350F for 25 to 35 minutes.

So easy right? I’ve tried it with all kinds of different chips (like toffee and cinnamon) as well as other fruits (apricot was yummy). Hope you like it
