Bacon and Cheese Croquettes Recipe

These potato, bacon and cheese croquettes I’m sharing today are SO yummy and as a bonus they are baked instead of fried. #Switch2Sourdough #collectivebias

It's a keeper. Super good potato cheese and bacon croquettes recipe. Freezes great and a great tutorial on how to make your own bread crumbs.

I’m a big fan of croquettes for every day food as well as entertaining because they are easy to make ahead of time and either finish cooking last minute or just reheat.

Breakfast potato bacon and cheese croquettes recipe

These ones are filled with potato bacon and cheese would be a tasty addition to any Easter or Mother’s Day brunch although I have to admit eating them because it was Monday as a good enough reason for us ;) I like using homemade breadcrumbs (directions for those below) since I can use California Goldminer Sourdough Bread which I usually have on hand for sandwiches. Also they get bonus points for their yummy flavor but also since sourdough doesn’t spike your blood sugar as much as other breads it’s one of those little swaps I like to do in my recipes these days.

Easter-Croquettes- ingredients and how to make home made bread crumbs

Ingredients

  • 1/2 C Coarse Bread Crumbs
  • 1/2 C Flour
  • 1 Egg
  • 2 Medium Potatoes
  • 1/2 C Shredded Cheese
  • 1/4 lbs Bacon
  • 1-2 TBS Green Onions chopped
  • Salt and Pepper to taste

Love these croquettes they are a great snack or addition to brunch.

Directions

  1. Peel and boil your potatoes until tender.
  2. Cook and crumble your bacon.
  3. Combine potatoes, cheese, bacon, and green onions and mash together with a fork. Add salt and pepper to taste.
  4. Form into patties. I usually do ovals that are more flat so that they will cook faster but I have also done small balls.
  5. Prepare coating station with a bowl with the beaten egg and a separate bowl with the bread crumbs.
  6. Coat the potato forms with flour and then roll in the egg and then the bread crumbs. Repeat for all pieces.
  7. Spray generously with spray oil on both sizes and bake in a preheated oven at 450 F until golden brown about 15 minutes. Flip around the 10 minute mark.

They are so good and easy. The recipe makes about 10 small (2x3x1 inch) croquettes. They are very filling and hearty. If serving as a side you only need 1-2 pieces. The recipe can easily be increased or decreased too and they freeze great.

How to make panko bread crumbs. Great homemade breadcrumb recipe

If you don’t already know how to make homemade bread crumbs they are super easy. I think it gives it that little extra something (plus you know exactly what goes into it). I like using California Goldminer Sourdough Bread that’s baked fresh daily at Smith’s and other Kroger stores. It is a sandwich loaf that you can find in their bakery section not the bread aisle.

To make the bread crumbs lay your bread onto a cookie sheet and dry it out by baking it at 300 F for about 15 minutes. Then just pulse it in your blender or food processor until you have coarse crumbs. This is a great way to use up extra bread that you might have left over from sandwiches or recipes. I keep a bag full of bread crumbs in the freezer for easy access.

And speaking of other uses for extra bread, this weekend we had a birthday party for my star and moon obsessed little boy and my mom made the cutest (and most delicious) homemade croutons by cutting the sourdough into stars, brushing with olive olive, sprinkling with garlic salt and Italian seasoning and then baking. World’s Best Guacamole Recipe

This my friends is hands down The BEST Guacamole recipe. In fact it may even be the best guac you’ll ever eat even including fancy (or fantastically divvy) restaurants!

This guacamole recipe is so good I've made it the last 3 weekends! Perfect party food or game day dip.

Since before I was married my hubby has raved about Jana’s guacamole. He reported times where she’d make the boys a batch and he’d eat it all up. Every guac was compared to hers and nothing was good enough. Well a couple years ago when she was extremely pregnant he called her up and asked her to teach me the secrets of the guac. Yup he’s THAT guy ha!

This guacamole recipes is so delicious and easy. i get asked for the recipe every time I make it.

We went over with all the ingredients and now I can say with confidence that I too can make the best guacamole I have ever tasted. I’m not a chunky veggie girl but I love this. Now I will share the recipe with you. It sounds basic but it’s delicious. You do need to taste as you go to see if you want more of anything but here is the base recipe adjust it to your liking.

Hands down the best guacamole I've ever had. Everyone asks for the recipe whenever I bring it to parties or game nights. Best appetizer ever.

  • 2 small roma tomatoes
  • 1 jalapeno
  • 1/4 red onion
  • 3 avocados
  • 1/4 tsp garlic
  • 1 TBS lime juice (adjust this to your taste)
  • 1-2 tsp veganaise (I’m linking it on amazon so you can see what it looks like but they only have cases most grocery stores carry it nowadays or you can use sour cream or plain yogurt but I do think the veganaise flavor is special)
  1. Roast the tomatoes and jalapeno. To do that just stick them on a skillet and burn them on all sides, set aside to cool
  2. Chop onion, tomatoes, jalapeno and garlic very fine. (you can do bigger pieces if you like it chunky). Set aside.
  3. Mash avocados and 1 tsp veganaise into whatever bowl you want to use.
  4. Add tomatoes, onions, garlic and 1/2 of the jalapeno to the avocado mixture.
  5. Mix it all up. Salt to taste. Add more of the jalapeno if you want more kick (after you taste it). Add more veganaise if you want it creamier.

This guacamole is so easy and delicious you won't believe the secret ingredient

Some times I add hot sauce, cilantro, and some onion powder. But this is one of those things where I add the ingredients in increments and taste and adjust. Do roast the veggies it makes all the difference.

Enjoy. I know it looks like regular old guac but everywhere I’ve taken it people have gobbled it up fast, I think the roasting and creamy stuff make all the difference.

I've tried A LOT of guacamole and this recipe is hands down THE BEST guac I've ever had (including restaurants). I have made it every weekend this month. Would be perfect for cinco de mayo, game day, or anytime you need a tasty and healthy appetizer.

World’s Best Spinach Artichoke Dip Recipe

 


You guys this spinach artichoke dip recipe is pretty much party food/appetizer perfection. Plus it’s SO easy to make! 

My new favorite party recipe. This spinach artichoke dip recipe is SO good and easy. Perfect appetizer or snack.

Chips and dip may very well be my favorite food. Seriously I love a good dip with a crunchy vehicle but I’m kinda picky. Not all dips (or chips for that matter) are created equally. But let me tell you this one right here is SO good and it can be made in the crock pot if you want.

The best spinach and artichoke dip recipe I have ever had. Only takes 15 minutes and the recipe is crock pot friendly (but does not require a slow cooker)

Ingredients

  • 8 oz light cream cheese (full fat is fine but I used light)
  • 16 oz light sour cream (same you can use full fat if you want)
  • 1 stick (1/2 C) butter
  • 10 oz frozen chopped spinach, thawed and squeezed to remove excess liquid
  • 14 oz Artichoke Hearts
  • 4oz diced chilies , mild drained (don’t worry this doesn’t make it spicy AT ALL pinky promise)
  • 1 1/2 C shredded Parmesan cheese
  • 1/4 C grated Romano cheese
  • 1 TBS chopped garlic

A quick word about the ingredients. This does not have a spicy flavor or kick to it. But the chilies do add a little something to the overall flavor. I would serve this to the most spice sensitive people without worrying. 20 month old Teddy gobbled this down without a blink. Also you could just use all Parmesan cheese but I do like the depth of flavor you get by using the Romano.

This is a keeper. Finally a spinach artichoke dip that is super delicious and takes only 15 minutes. Also crock pot compatible

What to Do

Easiest Method

  1. Chop artichokes.
  2. Drain off any excess liquid from spinach and chilies.
  3. Combine everything in crock pot and allow to heat through (about 40 minutes).

Fast Method

  1. Combine the cheeses, butter, and sour cream in a pot over medium heat until melted and combined.
  2. While the cheese is melting drain and chop the artichokes and drain any excess liquid off of the spinach.
  3. Stir the spinach, artichokes, chilies, and garlic into the cheese.
  4. Serve warm. This makes enough to fill a 2 quart crock pot.

If you are not in a hurry you could easily make this in a crock pot and save one dish to clean. Just put it on high until the cheese is all melted through and then stir and turn to low or warm.

I took this to my husband’s work Christmas party this week and it was devoured fast.

We had to leave early to get Teddy down and there was about one big scoop left and I couldn’t help but just take it with instead of leave it haha. I just finished it off as a blog writing snack and seriously reheated in the microwave it was just as good.

Bacon Cheez-It Nachos Recipe

We’re kind of nacho fanatics at my house. Every nacho we see on a restaurant menu we have try. Not that I’d ever turn down your standard nachos but lately the fancier and more unusual the better. Today I have a super nontraditional nacho recipe to share since they few different kind of Cheez-It items as the base. These are so easy and yummy they are the perfect party food for when you don’t know how many people are going to show up.

They come together really fast, like under 10 minutes tops, fast. Plus they are the type of thing you can customize for different pallets.

Cheez-It Nachos ingredients and recipe - Rae Gun Ramblings

What You Need

  • Pringles Nacho Cheese Tortilla Chips
  • Cheez-It Crunch’d Hot and Spicy
  • Cheez-It Grooves Zesty Cheddar Ranch
  • 1 C Shredded Cheese
  • 1/2 C Blue Cheese
  • 2-3 Stalks Green Onions, chopped
  • 1/2 lbs Bacon, cooked and crumbled

  1. Place a layer of tortilla chips over a cookie sheet.
  2. Top with the Cheez-It Grooves and the Cheez-It Crunch’d.
  3. Sprinkle with both kinds of cheeses.
  4. Top with chopped green onions and bacon.
  5. Pop in the oven to melt under the broiler. Watch it carefully since it can go fast. A minute or two is sometimes enough depending on how hot your broiler is. If you wanted to do personal sizes you could melt them in the microwave but for parties I think a big sheet pan is more fun and way faster.

So stinking easy right?!

I love this recipe because it brings a bunch of our favorites together. In addition to our nacho obsession, my husband is a snack food fiend. Multiple times a week he runs to the store and comes home with more snacks. I had to threaten him to stop him from eating up the ingredients because I knew I was going to be sharing this recipe. He’d already had the Cheez-It Grooves before but the Cheez-It Crunch’d are brand spanking new.
