Pressure Cooker Indian Butter Chicken Recipe

Indian butter chicken is one of my favorite dishes. Who knew it could be so easy to recreate at home with an electric pressure cooker!

I am definitely new to the Instant Pot or electric pressure cooker world. At first I wasn’t sure what I thought but I’m starting to love it. More recipes like this Pressure Cooker Indian Butter Chicken and I’ll be a complete convert. Right now I can say it’s growing on me and I’m committed to using it a few times a week (all 3 times last week were winners yay!).

This Butter Chicken recipe is adapted from Pressure Cooking Today. I made enough changes to suit my cooking style and our families tastes that I thought I’d should share my tweaks but I definitely used her recipe as a starting point.

Ingredients

  • 10-12 boneless skinless chicken thighs (about 2.5 to 3 lbs)
  • 1 cans 28 oz diced tomatoes and juice (or I’ve also used 2 x 14.5oz cans)
  • 1/2 jalapeno pepper (you can use more if you want spice this amount is flavor without spice)
  • 1 inch fresh ginger
  • 1/2 cup (1 stick) butter
  • 2 teaspoons ground cumin
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt
  • 3/4 cup heavy cream
  • 3/4 cup Greek yogurt
  • 2 teaspoons garam masala
  • 2 tablespoons cornstarch

I've made this every week since I discovered this instant pot pressure cooker indian butter chicken recipe

Directions

  1. Cut chicken into bite sized pieces (1-2 inches)
  2. Grate ginger into blender or food processor (I used my ninja), add in tomatoes and seeded jalapeno. Blend until well combined. If you don’t have a microplane you can just chop it or press it but I hate biting into ginger so I like it really small.
  3. Set your pressure cooker to saute/browning or whatever you used to do that (mine I just hit any button with the lid open) add in butter and allow to foam up.
  4. Add chicken in 2 batches flipping to just barely brown the meat. Remove and set aside in something that will preserve any juice that comes off you want that.
  5. Add cumin and paprika to the butter and stir continuously for about 20 seconds.
  6. Quickly add in tomato mixture, salt cream, yogurt, chicken and any drippings that have collected. Stir to combine everything.
  7. Close the lid and cook on for 5 minutes. Since we’ve been sauteing it shouldn’t take long to come to pressure before it starts counting the 5 minutes.
  8. Allow to natural release (basically don’t do anything after the timer goes off) for 10 minutes. Then do a quick release.
  9. Remove about 2 TBS of liquid from the pot and mix with cornstarch.
  10. Stir back into the pot along with the garam masala.
  11. Turn on saute or equivalent, bring to a boil and allow the curry to thicken to your liking.
  12. Add any additional salt according to your tastes and serve over rice or with naan or both!

Now I don’t have an Instant Pot brand pressure cooker but it should work the same way regardless of which you have. When I bought mine I didn’t realize there was such a hype about one brand. But it has done the job fine and it’s been easy enough after the initial learning curve to “translate” instant pot recipes.

Crock Pot Chicken and Dumplings Recipe

My new favorite crock pot recipe. These chicken and dumpings are so easy and delicious. Great weeknight meal

There’s nothing better than coming home to a house smelling delicious with a crock pot full of yummy food waiting for you after a busy Fall day. This crock pot chicken and dumplings recipe is one of my new favorites. I’ve feed it too the whole family and not only did they all gobble it up but my sister was begging for a repeat the very next week.

Super delicious crock pot chicken and dumpling recipe

Ingredients

  • 1 TBS Butter (optional)
  • 6 C Chicken Broth
  • 3 Stalks Celery, chopped
  • 3 Carrots, chopped
  • 1/2 Onion, chopped
  • 4 Chicken Thighs (I use skin on bone on but you can substitute any chicken really)
  • 8 oz Mushrooms (optional), quartered
  • 3 TBS Butter
  • 4 TBS Flour
  • 2 C Milk
  • Salt and Pepper to taste
  • 2 C Bisquick
  • 2/3 C Milk
  • 1 tsp Italian seasoning

Directions

  1. You can definitely just dump the first group of ingredients in the crock pot but since you are already going to make a cream sauce to stir in later I like to take the extra 5 minutes to brown the chicken and veggies. I don’t cook them through just get a bit of color on them by first browning the chicken skin side down in 1 TBS of butter. I remove those to the the crock pot once browned just a few minutes. And toss the onion, celery, and carrots in the pan and brown for a minute or two.
  2. Add the first batch of ingredients into the crock pot and cook on high for 4-6 hours. I leave the dirty pan covered to use later.
  3. 1/2- 1 hour before eating if you used bone on chicken remove the bones. I keep the skin but you can discard that if you want. I don’t bother shredding the chicken since it breaks apart fast jut by stirring in the rest of the ingredients and I prefer to have some bigger pieces of chicken.
  4. Add in your quartered mushrooms if using.
  5. Next make your cream sauce. Start by making the roux by melting your butter and cooking your flour in the butter. Stir in the milk to form a cream sauce and season to your family’s taste.
  6. Stir into the crock pot. Taste and add any more seasoning you might want.
  7. Finally make your dumplings by mixing the bisquick, Italian seasoning and remaining milk together. Spoon onto the top of your crock pot mixture and cover for another 2o-90 minutes. 20 minutes should be plenty of time for it to cook through but I’ve left it as long as 90 minutes and they were fine (although I do prefer the shorter cooking time myself).

My new favorite weekday dinner recipe. 10 Minute buffalo chicken one pot pasta. So fast and so yummy.

This time of year I am SO crunched for time that even my normal speedy 30 minute meals seem to eat away time that I just don’t have. With my busy season I’m sad to report that I’ve been picking up food and eating out way too much. I just get so busy that really only super easy meals are the only kinds that will have a chance of being made. For me it’s not so much how long the food takes to make, although that does play a part. But in addition to the making of the food there is the cleaning of the dishes. And anyone that knows me knows that I HATE DOING DISHES.

Pronto Pasta and Tyson Ready Chicken

Honestly I’m not sure why I’ve never tired to convert my recipes into one pot creations before. I just recently discovered Barilla Pronto pasta which is magical no drain stuff. You just throw it in a pan with water and in 10 minutes it’s ready to go.  No waiting for water to boil and draining and all of that. And it tastes just like traditional pasta, told you magical. I combined that with the full cooked 98% fat free Tyson Grilled and Ready chicken breast strips and that made it so this dish came together in just about 10 minutes.

Most years our dinners fall by the wayside and we eat fast junk or out which isn’t fast and adds up. Any ways I know I’m not the only one that has busy times so I thought I’d share since I can already tell this is going to be a lifesaver for me.

  • 6 oz Barilla Pronto Pasta (I used spaghetti but any kind will work)
  • 2 C Water
  • 1-1 1/2 C Milk
  • 2 TBS Butter
  • 2 TBS Flour
  • 2 oz Cheese (I like Havarti but any neutral cheese works)
  • 1/4-1/2 C Blue Cheese crumbles
  • 1/4 tsp Onion Powder
  • Salt and Pepper to Taste
  • Tyson Grilled and Ready Chicken Strips
  • Buffalo Sauce

This is SO good and easy. Fast chicken dinner pasta recipe

  1. Start by adding the pasta and water to a cold pan.
  2. Turn on heat and boil for about 10 minutes. When most of the water is absorbed add in the butter and flour and stir.
  3. Then gradually add in the milk and cheeses to form the sauce.
  4. Season with onion powder and salt and pepper.
  5. If the chicken is still frozen thaw/heat in microwave while pasta is cooking.
  6. Place on top of the pasta and drizzle with buffalo sauce to your family’s preferences.
  7. Serve with some celery and garlic bread for a complete meal.

BEST Crock Pot White Chili Recipe

This is my new favorite white chili recipe. It's so good we can't stop making this yummy crock pot meal. Perfect weeknight dinner idea.

Ready for comfort in a bowl? Well that’s what this Crock Pot White Chili recipe is. Seriously just thinking about it makes my mouth water. This has so much flavor with all the convenience of a slow cooker meal.

The best white chili recipe. This slow cooker meal is so easy and delicious.

It has a small amount of kick from chilies but the kids in our family still goggle it up along with every one else. I like to serve it with a big slice of my 3 ingredient cornbread recipe.

Our family's new favorite white chili recipe. Super easy crock pot dinner idea.

  • 1.5 lbs of skinless boneless chicken meat
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 can chicken broth (14.5 oz)
  • 1 small can chopped green chiles (4.5 oz)
  • 1 can corn (15 oz)
  • 2 cans cannellini beans (about 30 oz)

For Roux

  • 3 TBS butter
  • 3 TBS flour
  • 1 C milk
  • 1 Chicken bouillon cube (or equivalent)
  • salt and pepper to taste

To Finish and Topping Individual Portions

  • 1/2/-1 C Greek Yogurt (or sour cream)
  • Crushed tortilla chips for topping
  • Shredded Cheese for topping
  • Avocado for topping

Add all the first group of the ingredients to the crock pot. Making sure to drain all the canned ingredients. Cook on low for 6-8 hours. 1 hour before serving make the roux by melting the butter. Next mix in the flour and cook over medium heat. Mix in milk and bouillon. Salt and pepper to taste. Stir into crock pot breaking up the chicken meat. Allow to cook 1 additional hour (although if you’re in a rush 15 minutes should work). Right before serving stir in 1/2 C yogurt and taste. Add any additional salt and pepper needed. Serve topped with a generous amount of cheese, crushed tortilla chips, avocado and dollop of yogurt.

Crock Pot Chicken Fricasee Recipe

It's a keeper! This French inspired chicken slow cooker recipe is so yummy. Great dinner idea

Are you ready for your mouth to water? The Crock Pot Chicken Fricasee recipe I’ve got for you today is so good. Like I’m kind of drooling just thinking about it. The pictures don’t do this recipe justice. but trust me. Your house will smell amazing and then your taste buds will do a major happy dance.

While this is a slow cooker recipe it isn’t your normal dump and go style. It takes some prep but I promise you it’s well worth it and so much better than heating up your whole house and being stuck at home for hours with the oven.

Made this and everyone LOVED it. French chicken fricassee recipe for the crock pot slow cooker. Great dinner idea

  • 4 Chicken Thighs
  • 2TBS Butter
  • 2 Carrots
  • 2 Stalks Celery
  • 1/2 Onion
  • 8 oz mushrooms
  • 2 TBS Flour
  • 1/2 C White Wine
  • 2 C Chicken Broth
  • 1 Bay leaf
  • 2 Sprigs Thyme
  • 2 sprigs parsley
  • 1/4 C Heavy Cream
  • 1 Egg yolk
  • 2 sprigs tarragon (about 3 TBS chopped)
  • 1/2 lemon juiced
  • 1 TBS Butter
  1. Season your chicken thighs with salt and pepper. In a large pot melt 2 TBS butter and brown your chicken skin side down. Place into crock pot skin side up.
  2. In the pot that you browned the chicken add chopped carrots, celery, and onion. Cook a few minutes and then add in mushroom and flour. Stir together to cook the flour a minute or two.
  3. Stir in the wine and allow to thicken in the mixture. Then stir in the chicken stock, thyme and parsley stirring and scrapping up any brown bits. If you don’t cook with wine you can just use extra stock.
  4. Pour over the chicken in the crock pot. And cook on low for 6-8 hours.
  5. About 20-40 minutes before serving time. Mix 1/4 C cream with 1 egg yolk.
  6. Add 1/2 C of liquid from the crock pot to that mixture to temper.
  7. Remove chicken from the crock pot.
  8. Add 1 TBS butter to the crock pot, stir in egg cream mixture, and squeeze in the juice of half a lemon.
  9. Add in chopped tarragon and chicken. Allow to cook covered for another 15-30 minutes before serving.

Classic French chicken fricassee tweaked for the slow cooker. So delicious

I like to serve this over mashed potatoes. It’s so creamy and rich your mouth will thank you.

Oven Fried Chicken Recipe

Hands down the best oven fried chicken recipe. I make this for family dinner all the time and it turns out great.

I love fried food but I don’t love the mess of deep frying or to be honest all of the oil that can go into my food. That’s why my Oven Fried Chicken Recipe that I’m sharing today is one of my favorites.

This oven fried chicken recipe is super good. Turns out great all the time. Perfect for dinner.

It is so good and actually tastes like fried chicken but without all of the annoying things of traditional frying.

My go to weeknight dinner chicken recipe. This oven fried chicken turns out great every time

You can use any proportion of chicken to coating. The recipe is super forgiving. Really as long as you have enough to cover your chicken you’re good to go. For ease though I’m writing the recipe for 6 pieces but really you can add and divide if needed throw in extra as you go etc. The only thing to keep in mind is do NOT increase the about of butter you use. 1 TBS per dish is plenty even if you’re using a whole cut up chicken I’ve used as little as 1 tsp before and it turned out great but when I’ve done more than 1 TBS the chicken just doesn’t crisp up properly.

  • 6 Pieces Chicken Cut Up (I like thighs but you can use any cut you like but it needs to be skin on)
  • 1/2 C Bisquick
  • 1/2 C Flour
  • 1/2 to 1 tsp Salt for coating
  • 1/2 tsp onion powder
  • 1 TBS Italian Seasoning
  • Garlic Salt to taste
  • Pepper to taste

What to Do

  1. Preheat oven to 400 F. Once to temperature place an oven proof dish large enough for all the chicken to lay down in one layer with 1 TBS of butter.
  2. In a large bag combine Bisquick, flour, salt, onion powder, and Italian Seasoning. Shake to mix and set aside.
  3. Sprinkle chicken with garlic salt and pepper to taste on both sides.
  4. Toss chicken in flour mixture to coat fully.
  5. Swirl the melted butter in the dish to evenly distribute and then place coated chicken skin side down in hot dish.
  6. Bake at 400 F for 15 minutes. Flip over so skin is up and then cook until finished about 10 more minutes.

Chicken and waffles with super easy oven fried chicken recipe. SO so good.

We love eating this with mashed potatoes and wilted spinach or even with my easy buttermilk waffles recipe for a super easy chicken and waffles meal.

Curry Chicken Fingers with Avocado Ranch Dipping Sauce

This is so good. Quick and easy and flavorful curry chicken fingers recipe

This little delicious bits of curry infused chicken covered with crispy panko bread crumbs dipped in avocado ranch dipping sauce are one of my favorite creations. These homemade chicken strips are so tasty and flavorful and a bazillion times better for you then what you’ll find in the freezer section and just a tiny bit more work.

Quick and easy curry chicken fingers. Love this recipe so much and the bonus avocado ranch dipping sauce.

The curry adds a real depth of flavor and as long as you control how much curry paste you use it doesn’t need to be too spicy to share with the little ones. We love eating them with an easy avocado ranch dip since it really compliments the curry flavor but really any dipping sauce you want will probably taste great!

My favorite chicken finger recipe so yummy and flavorful

Curry Chicken Fingers

  • Boneless Skinless Chicken Thighs
  • Red Curry Paste (about 1 tsp per 2 thighs)
  • Greek Yogurt or Sour Cream (about 2-3 TBS per 2 thighs)
  • Salt to taste
  • Panko bread crumbs to coat
  • Spray Oil

Cut the chicken pieces into strips or bite size chunks depending on your preference. Place in a ziplock bag. Add in curry paste and yogurt. Seal bag, smoosh around with to distribute the seasoning and allow to marinate for at least 30 minutes but I like it best when I think it do it a few hours ahead of time. When you are ready to bake it dip in bread crumbs and spray generously with spray oil. Bake at 400F until chicken is cooked through about 20 minutes. Taste and add salt if desired (depending on what kind of curry paste you use you may or may not need any salt).

Avocado Ranch Dipping Sauce

  • 8 oz Greek yogurt of sour cream
  • 1/2 packet ranch dip
  • 1/2 large avocado

Mash up the avocado and mix with the rest of the ingredients. Super duper easy. Serve with curry chicken fingers and enjoy!

Did you guys have a good Thanksgiving? Ours was SO great! Everything we had was so stinking delicious and it was just a wonderful time with family. I’ve mentioned before that we are totally anti leftover. Like if something gets put in our fridge even if it’s crazy delicious we are SO bad at eating leftovers that it will probably go undiscovered for months in our fridge. Seriously our fridge is where leftovers go to die, except at Thanksgiving. Thanksgiving and St. Patrick’s day are the only times we actually succeed at eating leftovers.

So today I’m sharing one of my favorite ways to remake Thanksgiving leftovers: the Leftover Thanksgiving Turnover. Basically it’s whatever you love thrown in a puff pastry and it’s super delicious and tastes like a whole new meal with the happy familiarness of Thanksgiving dinner.

Ingredients

  • 1 Sheet Puff Pastry
  • Thanksgiving Leftovers (whatever sounds good to you but I like to use mashed potatoes, gravy, green bean casserole, and turkey)
  • Shredded Cheese

Delicious way to use up leftovers from Thanksgiving in a turkey puff - Rae Gun Ramblings

Lay the puff pastry on a cookie sheet. Mix all the Thanksgiving leftovers together and put on one half of the sheet of pastry. Cover with shredded cheese. Fold the other edge of the pastry over. Close the edge and seal with the tins of a fork. Prick a few times to vent. Bake at 400F until your pastry is golden brown.
