Coconut Lime Ice Cream Recipe

3 ingredient coconut lime ice cream. Super refreshing Summer dessert. The kids love making it with me.

It was nice and warm. The music maker had just mowed the naughties my mom, sister and I were lounging in the yard and it just seemed that we needed to make some ice cream. Lanna lost interest after a while but Tira had fun regularly checking the ice cream and watching it grow as it froze.

I’ve posted this recipe a couple years ago but I figure most of you haven’t been around that long so here it is. It’s ridiculously simple and while it sounded delicious to me both my sister and mom thought the combo sounded weird but but loved it once they had a wee taste. It’s super refreshing.

Coconut Lime Ice Cream Recipe

  • 1 (15 ounce) can cream of coconut (this is NOT the same as coconut milk, I found it in the ‘Mexican’ section of the grocery store)
  • 1/2 cup fresh lime juice
  • 3/4 cup water

The Steps

  1. Mix together the cream of coconut, lime juice, and water in a bowl.
  2. Refrigerate if you’re not ready to process it.
  3. Process in your ice cream maker.

If you don’t have an ice cream maker and have been considering one I love my kitchen aid ice cream maker  attachment.
