15 Minute Pasole Recipe Just 5 Ingredients

It’s hard to get a yummy nutritious meal on the table some nights but this 5 ingredient pasole recipe comes together in just 15 minutes and tastes sooooo good.
It's a keeper made this 15 minute pasole recipe last night for dinner and the whole family loved it. SO easy and just 5 ingredients.

This pasole recipe is so yummy and really all you have to do is dump everything in a pot and heat it up. If you’re feeling adventurous you can serve it with some fry bread but tortilla chips would also be a yummy side for this easy weeknight meal.

This recipe is adapted from something my local Trader Joe’s was tasting one day but they didn’t use hominy (probably because they don’t sell it) and I was like wwwwhhhhaaat how can you call that delicious soup pasole if it doesn’t have hominy. So after buying all the ingedients for their pasole I picked up some hominy and it made it PERFECT, well after I added more broth ;)

A new family favorite. Love this 15 minute pasole recipe. So good and easy. Perfect weeknight meal.

15 Minute Pasole Recipe


I’m linking a few ingredients so you know what to look for but the price on amazon is WAY higher than the market for both! (aff links)

  • 1 Jar Trader Joe’s Cowboy Caviar (this is spicy for a less spicy version use just 1/4 to 1/2 a jar or Trader Joe’s Corn Salsa)
  • 6 C Chicken Broth
  • 5-10 oz Shredded Green Cabbage
  • 12 oz Carnitas (or your own leftover cooked pork (or chicken) perfect for crock pot leftovers)
  • 1 Small Can Hominy


  1. Shred Carnitas with two forks.
  2. Rinse and drain the hominy.
  3. Add all the ingredients except the cabbage and bring to a boil.
  4. Turn down and add in 5 oz of cabbage. If you want to add in more do so. I like to reserve some to sprinkle on the top as garnish but I add almost the whole bag.
  5. Serve and enjoy!

So stinking easy right? And as a bonus you could keep all the ingredients on hand except for the cabbage and you could throw it together on one of those days and spare your family some not so yummy not so nutritious drive-thru option!

Crock Pot Chicken and Dumplings Recipe

My new favorite crock pot recipe. These chicken and dumpings are so easy and delicious. Great weeknight meal

There’s nothing better than coming home to a house smelling delicious with a crock pot full of yummy food waiting for you after a busy Fall day. This crock pot chicken and dumplings recipe is one of my new favorites. I’ve feed it too the whole family and not only did they all gobble it up but my sister was begging for a repeat the very next week.

Super delicious crock pot chicken and dumpling recipe


  • 1 TBS Butter (optional)
  • 6 C Chicken Broth
  • 3 Stalks Celery, chopped
  • 3 Carrots, chopped
  • 1/2 Onion, chopped
  • 4 Chicken Thighs (I use skin on bone on but you can substitute any chicken really)
  • 8 oz Mushrooms (optional), quartered
  • 3 TBS Butter
  • 4 TBS Flour
  • 2 C Milk
  • Salt and Pepper to taste
  • 2 C Bisquick
  • 2/3 C Milk
  • 1 tsp Italian seasoning


  1. You can definitely just dump the first group of ingredients in the crock pot but since you are already going to make a cream sauce to stir in later I like to take the extra 5 minutes to brown the chicken and veggies. I don’t cook them through just get a bit of color on them by first browning the chicken skin side down in 1 TBS of butter. I remove those to the the crock pot once browned just a few minutes. And toss the onion, celery, and carrots in the pan and brown for a minute or two.
  2. Add the first batch of ingredients into the crock pot and cook on high for 4-6 hours. I leave the dirty pan covered to use later.
  3. 1/2- 1 hour before eating if you used bone on chicken remove the bones. I keep the skin but you can discard that if you want. I don’t bother shredding the chicken since it breaks apart fast jut by stirring in the rest of the ingredients and I prefer to have some bigger pieces of chicken.
  4. Add in your quartered mushrooms if using.
  5. Next make your cream sauce. Start by making the roux by melting your butter and cooking your flour in the butter. Stir in the milk to form a cream sauce and season to your family’s taste.
  6. Stir into the crock pot. Taste and add any more seasoning you might want.
  7. Finally make your dumplings by mixing the bisquick, Italian seasoning and remaining milk together. Spoon onto the top of your crock pot mixture and cover for another 2o-90 minutes. 20 minutes should be plenty of time for it to cook through but I’ve left it as long as 90 minutes and they were fine (although I do prefer the shorter cooking time myself).

BEST Crock Pot White Chili Recipe

This is my new favorite white chili recipe. It's so good we can't stop making this yummy crock pot meal. Perfect weeknight dinner idea.

Ready for comfort in a bowl? Well that’s what this Crock Pot White Chili recipe is. Seriously just thinking about it makes my mouth water. This has so much flavor with all the convenience of a slow cooker meal.

It has a small amount of kick from chilies but the kids in our family still goggle it up along with every one else. I like to serve it with a big slice of my 3 ingredient cornbread recipe.

Our family's new favorite white chili recipe. Super easy crock pot dinner idea.

  • 1.5 lbs of skinless boneless chicken meat
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 can chicken broth (14.5 oz)
  • 1 small can chopped green chiles (4.5 oz)
  • 1 can corn (15 oz)
  • 2 cans cannellini beans (about 30 oz)

For Roux

  • 3 TBS butter
  • 3 TBS flour
  • 1 C milk
  • 1 Chicken bouillon cube (or equivalent)
  • salt and pepper to taste

To Finish and Topping Individual Portions

  • 1/2/-1 C Greek Yogurt (or sour cream)
  • Crushed tortilla chips for topping
  • Shredded Cheese for topping
  • Avocado for topping

Add all the first group of the ingredients to the crock pot. Making sure to drain all the canned ingredients. Cook on low for 6-8 hours. 1 hour before serving make the roux by melting the butter. Next mix in the flour and cook over medium heat. Mix in milk and bouillon. Salt and pepper to taste. Stir into crock pot breaking up the chicken meat. Allow to cook 1 additional hour (although if you’re in a rush 15 minutes should work). Right before serving stir in 1/2 C yogurt and taste. Add any additional salt and pepper needed. Serve topped with a generous amount of cheese, crushed tortilla chips, avocado and dollop of yogurt.

Curry Peanut Butter Ramen Recipe

Curry Peanut Butter ramen one of my favorite weeknight meals. So easy and yummy - Rae Gun Ramblings

Today’s recipe is something I through together a few times a month. It’s so flexible and fast plus I almost always have everything on hand. Not only that but it’s super yummy and satisfying. We call it fancy ramen in our house and there are a few different versions but today I’m sharing my curry peanut butter ramen.

This recipe serves 2 adults but it’s easy to add more. Also I’ve halved it before by just breaking the noodles in half and using only half a pack of noodles/seasoning pack. When you have a bit of left over meat just chop it up, throw it into a baggie and stick it in the freezer for this meal!

Curry Peanut Butter Ramen Recipe

Yummy spin on ramen. Curry Peanut Butter version. Great for cleaning out the fridge - Rae Gun Ramblings


  • 1 Pack Ramen (I like the chicken flavored kind)
  • 1/2 C chopped vegetables (I usually use frozen broccoli or carrots and zucchini)
  • 1/2 C chopped meat (left over rotisserie chicken, beef really anything works)
  • 2 soft boiled eggs
  • 1 heaping TBS Peanut Butter (or more to taste)
  • 1-2 TBS Curry powder (to taste since the intensity of curry powders vary)

Put all ingredients except the eggs into a pot and cover with water. Boil until everything is cooked through and the noodles are to your preferred tenderness. Taste and add more seasoning or peanut butter if desired. Divide into bowls and serve topped with egg. So easy right?

Coconut Curry Chicken Lentil Soup Recipe

Coconut Curry Chicken (or Turkey) Lentil Soup perfect weeknight meal - Rae Gun Ramblings

Whenever I have leftover chicken or turkey I make this coconut curry chicken lentil soup recipe. It’s so yummy, easy, and just a little different than your normal leftover type soup. It has an Indian feel so it’s great to serve with naan bread which I’ve found at both Trader Joe’s and Whole Foods.

It comes together fast enough making it a great weeknight meal. Even better, it freezes like a dream! I like to grab a rotisserie chicken and use part of it for this. Normally I make half a recipe (just for me and Daniel) but since I wanted extra in the freezer I doubled it. The recipe can be increased ore reduced easily. Just stick to the same proportions.

Coconut Curry Chicken Lentil Soup Recipe from Rae Gun RamblingsIngredients

  • 2 Chicken Breasts, cooked and chopped
  • 12-16 C Water (depending on how much the lentils suck up and how thick of a soup you want)
  • 1 Bag Lentils
  • 6 Cubes Chicken Bouillon (or substitute 6 of the cups of water for chicken broth)
  • 3 Heaping TBS Curry Powder (or more to taste)
  • 1 Can Coconut Milk (I always use the light or reduced fat kind)
  • Salt, Pepper, and Onion powder to taste


  1. Boil lentils and chicken in 8 oz water until lentils are tender. Keep an eye on it so that the water doesn’t burn off.
  2. Add bouillon, curry powder, coconut milk, and additional water to the desired consistency.
  3. Add other seasonings to taste. Serve and enjoy!

We aren’t big sports fans in my house, but we do enjoy what I like to call “Football Food”. Ever since I was little we’d always have a Big Game party complete with buffallo wings and other delicious appetizers. I have to admit I really like the commercial watching and seeing what shenanigans will occur during half time. So today I have a few quick and easy game day food ideas that are little to no prep perfect for keeping you glued to the game or so you don’t have to miss that commercial everyone will be talking about!

I really like to have options at parties but I have a problem with lots of people RSVP-ing yes to my parties and then about 50% of them actually showing up. Only for my gender reveal party more than RSVP-ed showed up so now I’m even more confused on how much food to prep. My solution is to have party food that 1) can be made quickly and last minute depending on how many people show up and 2) can be frozen and still will be yummy for the future. One of the best things I’ve found for this is doctoring up pre-made food.

My latest semi-homemade creation is my Lasagna Crock Pot Soup Recipe. My sister made a lasagna soup that was SO amazing I’ve been thinking about it for months. The only thing is that it had loads of ingredients and I just had a feeling the work was unnecessary. So armed with a Stouffers frozen lasagna from Walmart I decided to try and see if I could make a low maintenance crock pot version. It turned out great, total comfort food but with a twist. Not only that but it’s totally freezable so I’ve got a couple of big containers waiting for when the baby comes.

Crock Pot Lasagna Soup Recipe

  • 1 Frozen Stouffers Party Lasagna
  • 7-9 C Chicken Broth
  • Italian Seasoning and Garlic Salt to taste
  • Shredded mozzarella for topping (optional)
  1. Leave lasagna to thaw enough to be cut with a knife. I put mine in the fridge the night before. It was definitely still frozen when I pulled it out of the fridge but cut-able. As long as it’s not frozen solid you’re good to go. Cut into 1 inch slices and place in crock pot.
  2. Cover with chicken broth. I used 9 cups of water and 7 bouillon cubes (my cubes each make 1 C broth).
  3. Cook on high for 3 hours or until heated through.
  4. Season with Italian seasoning and garlic salt to taste. Top with a sprinkling of shredded mozzarella if desired.

So yummy. This is definitely a recipe I’ll be keeping in rotation and on hand for parties.

Another thing I like to do for easy party food is to have a pizza station. DiGiorno frozen pizzas are great for this. My husband likes supreme but I don’t do olives or peppers so I like to pre cut slices and have them out so that people can remove toppings they don’t want or add others to fancy it up. In the past I’ve put out various yummy cheeses, pear (it’s good trust me), mushrooms, cooked chicken, BBQ sauce, you get the point. But the idea is that people can adjust the pizza to their pallet and also cook it when they are ready so it can be nice and fresh for the eating.

Turkey Tortellini Soup Recipe and What’s For Dinner

Turkey Tortellini Soup super fast idea to use up Thanksgiving leftovers - Rae Gun Ramblings

I may have made the yummiest soup ever this week and it was day 4 of eating Thanksgiving leftovers. If you don’t already know, we don’t eat leftovers. Like really, I cook two servings and if there are any leftovers they die a slow solitary death in my fridge, except for Thanksgiving and St. Patrick’s Day leftovers. Even still we were burn on open face sandwiches after the first round so when the last of the precious meal was still left to be consumed I made it into a yummy Turkey Tortellini Soup and served it with my knock-off Macaroni Grill Rosemary Bread. And frankly I like it enough that I may make up all the ingredients just to make this soup in the future!

Turkey Tortellini Soup super fast idea to use up Thanksgiving leftovers - Rae Gun Ramblings


  • 2 TBS butter
  • 2TBS flour
  • 1 C milk
  • 3-4 C Chicken (or turkey) broth (I just used bouillon and water)
  • 1 C leftover green bean casserole (cut into small pieces, I use kitchen shears)
  • 1/2-1 C leftover mashed potaoes
  • 1/2 to 1 C turkey coarsely chopped
  • 9 oz refrigerated tortellini (I used Buitoni’s Three Cheese Tortellini)
  • salt and pepper to taste

Make a roux from by melting the butter and then cooking the flour. Gradually add milk to make a cream sauce. Add in 3 cups of chicken broth, green beans, mashed potatoes, and turkey. Boil water in a separate pan and cook tortellini al dente. Once everything in the soup mixture is warm and well incorporated season to taste. Add in tortellini. If you want it thinner add some more broth. It’s so so yummy! I wish I had done it sooner so we had more.

As far as food goes this week, my mom randomly called an announced that it was cheese fondue weather. And really who am I to complain. So I’m off to go have a mini Swiss feast. I’ve been doing “cooking class” with the nieces and this week I taught them how to turn on the burner on the stove. T was so stressed that she shed a few tears but she made me and herself a tasty quesadilla on the stove. L turned it on just for practice and then claimed she didn’t like crispy quesadillas so went bake to the microwave, peasant. Tomorrow we’re gonna make some Cranberry Double Chocolate Cookies because I’ve been craving them like a beast but kept forgetting I was out of eggs. But this will be fixed!
