Pressure Cooker Indian Butter Chicken Recipe

Indian butter chicken is one of my favorite dishes. Who knew it could be so easy to recreate at home with an electric pressure cooker!

I am definitely new to the Instant Pot or electric pressure cooker world. At first I wasn’t sure what I thought but I’m starting to love it. More recipes like this Pressure Cooker Indian Butter Chicken and I’ll be a complete convert. Right now I can say it’s growing on me and I’m committed to using it a few times a week (all 3 times last week were winners yay!).

This Butter Chicken recipe is adapted from Pressure Cooking Today. I made enough changes to suit my cooking style and our families tastes that I thought I’d should share my tweaks but I definitely used her recipe as a starting point.

Hands down the best Instant Pot Butter Chicken Curry Recipe great weeknight dinner


  • 10-12 boneless skinless chicken thighs (about 2.5 to 3 lbs)
  • 1 cans 28 oz diced tomatoes and juice (or I’ve also used 2 x 14.5oz cans)
  • 1/2 jalapeno pepper (you can use more if you want spice this amount is flavor without spice)
  • 1 inch fresh ginger
  • 1/2 cup (1 stick) butter
  • 2 teaspoons ground cumin
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt
  • 3/4 cup heavy cream
  • 3/4 cup Greek yogurt
  • 2 teaspoons garam masala
  • 2 tablespoons cornstarch

I've made this every week since I discovered this instant pot pressure cooker indian butter chicken recipe


  1. Cut chicken into bite sized pieces (1-2 inches)
  2. Grate ginger into blender or food processor (I used my ninja), add in tomatoes and seeded jalapeno. Blend until well combined. If you don’t have a microplane you can just chop it or press it but I hate biting into ginger so I like it really small.
  3. Set your pressure cooker to saute/browning or whatever you used to do that (mine I just hit any button with the lid open) add in butter and allow to foam up.
  4. Add chicken in 2 batches flipping to just barely brown the meat. Remove and set aside in something that will preserve any juice that comes off you want that.
  5. Add cumin and paprika to the butter and stir continuously for about 20 seconds.
  6. Quickly add in tomato mixture, salt cream, yogurt, chicken and any drippings that have collected. Stir to combine everything.
  7. Close the lid and cook on for 5 minutes. Since we’ve been sauteing it shouldn’t take long to come to pressure before it starts counting the 5 minutes.
  8. Allow to natural release (basically don’t do anything after the timer goes off) for 10 minutes. Then do a quick release.
  9. Remove about 2 TBS of liquid from the pot and mix with cornstarch.
  10. Stir back into the pot along with the garam masala.
  11. Turn on saute or equivalent, bring to a boil and allow the curry to thicken to your liking.
  12. Add any additional salt according to your tastes and serve over rice or with naan or both!

Now I don’t have an Instant Pot brand pressure cooker but it should work the same way regardless of which you have. When I bought mine I didn’t realize there was such a hype about one brand. But it has done the job fine and it’s been easy enough after the initial learning curve to “translate” instant pot recipes.

White Christmas Salmon Club Sandwich Recipe

White Christmas is hands down my favorite Christmas movie. To celebrate I thought I’d make a spin on the Club Sandwich they have in the film.

Salmon Club Sandwich


  • Sourdough Bread
  • Cooked Salmon
  • Lettuce
  • Bacon
  • Havarti
  • Avocado
  • Mayo (optional)
  • Toothpicks


  1. Toast the bread.
  2. Cut the bread and cheese in triangles (or if you want you can cut after you assemble the sandwiches)
  3. Layer 2-3 ingredients between a layer of bread and repeat.
  4. Stack the segments and hold together with a toothpick

Crock Pot Beef Onion Wine Sauce Recipe


This time of year is SO busy I’m grateful for delicious and easy meals like this Crock Pot Beef in Onion Wine Sauce recipe that we love over pastaIt's a keeper. Easy dump crock pot beef in wine onion sauce. Great over pasta for an easy slow cooker dinner recipe

All you have to do is dump the ingredients together and bam a few hours in the slow cooker and you have a tasty meal the whole family will love (I know mine does)!

  • 2 lbs Beef Stew Meat, 1 inch cubes
  • 1/2 onion, coarsely chopped
  • 1 envelop onion soup mix
  • 3 TBS cornstarch
  • Salt and Pepper to taste (usually I don’t need any)
  • 1 1/2 C Red Wine
  • Egg Noodles for serving

How to make the best onion beef crock pot pasta sauce (and double duty leftover recipes)


  1. Place all ingredients (except for the egg noodles) into the crock pot and stir.
  2. Cover and cook on high for 5-6 hours or low for 10-12 hours.
  3. Serve over cooked pasta

So insanely easy and so yummy! As a bonus, if you happen to have leftovers you can use them in lots of ways.

One of my favorites is to add some sour cream and mushrooms (and a little beef broth if you need to thin it out) and you’ve got a super easy Beef Stroganoff!

I’ve also thrown it in to packaged ramen for a flavor boost and yummy soupy noodle twist! Gotta love a meal prep that can pull double (or even triple) duty right?

Classic Hobo Foil Dinner Recipe

There’s just something awesome about a foil dinner whether it’s out camping, cooked on the grill, or prepared in the oven.

New family favorite recipe. Whether at home in the oven, camping or on the grill this is our favorite version of the classic hobo foil packet dinners

I’m so excited to be sharing a recipe for a Classic Hobo Foil Dinner from my friend’s awesome new book Foiled! It’s full of meals and treats that are cooked in foil. Dinners, breakfasts and even desserts.

It was so hard for me to decide which one to share but I thought I’d go with the classic.

Love this recipe for classic hobo foil packet dinners. Great for camping cooking on the grill or even making in the oven


  • Foil Paper
  • Spray Oil
  • 1 lbs. Ground Beef
  • Onion, sliced
  • 1/2 lbs. Mushrooms, quarted (the original recipe calls for carrots but I had mushrooms on hand)
  • 1/2 C Green Beens
  • 1 C Potato (about 1 medium potato), sliced
  • 1 can Cream of Chicken Soup

  1. Preheat oven to 350 F or heat up stove or campfire.
  2. Prepare 4 pieces of foil about 18 inches long and spray with oil.
  3. Place a spoonful of soup onto the center of each piece of foil.
  4. Layer 1/8 of the potatoes on each piece of foil.
  5. Divide the beef between each packet.
  6. Top with mushrooms, green beans and remaining potatoes.
  7. Sprinkle with salt and pepper to taste.
  8. Top with the remaining soup.
  9. Bring the long edges of foil together and fold down twice to seal.
  10. Then fold over the short ends twice on each side.
  11. Cook 30-60 minutes check at the 30 minute point. For me using the oven this was the perfect amount of time.

Fun cookbook filled with camping food and recipes that can be cooked in foil. Breakfast, dinners, desserts and sides.

This is such a fun meal to do at home or out camping. It would be great for entertaining and just let guest make their own packets up. The kids will have a blast eating out of the foil and save yourself extra clean up. And really you need to check out Foiled! it’s such a great book full of all kinds of creative foods like Coconut Lime Halibut, S’mores Quesadillas and more.

Freezer Friendly Italian Stuffed Shells Recipe

I have loved this freezer friendly Italian stuffed shells recipe for years. The only thing is that it does take some energy and is messy so when I do it I usually save it for a special occasion and/or multiply it so I have a freezer full. This is actually one of my favorite recipes to me it’s special but compared to other special foods it’s actually not too hard to make. In fact we had it for Christmas this year. I made a triple batch so that I could freeze a few trays for after Toasty is here. I have high hopes of making freezer white chili, creamy enchiladas, and shepherd’s pie too before this boy breaks free.

Delicious stuffed shell (freezer friendly) recipe at Rae Gun Ramblings

This recipe makes about 30 large stuffed shells. If you have it with some garlic bread and a salad a serving of 4-5 per adult would be a pretty filling meal. I like to cook extra shells since there always are a handful of shells that stick or break apart when cooking.

Italian Stuffed Shells Recipe

  • 30 to 40 large pasta shells cooked


  • 1 lbs mild Italian sausage
  • 1/2 C white wine (optional)
  • 4 TBS flour
  • 4 TBS butter (if needed)
  • 2 C milk
  • 16 ounces shredded mozzarella (save some for the topping)
  • 1 egg


  • 1 large (28 oz) can diced Italian style tomatoes
  • 1/2 onion chopped
  • 1 tsp minced garlic
  • 2 TBS butter
  • 1/2 C white wine (optional)
  • 1 tsp Italian seasoning (or fresh herbs of your choice sage and rosemary are great in this)
  • Salt and pepper to taste

  1. Make sauce by sauteing onions and garlic in butter.
  2. Add tomatoes, wine, and herbs. Simmer for 15 minutes.
  3. Add salt and pepper to taste.
  4. In a separate pan (I like to use a wok) make the pasta filling. Start by browning the sausage with wine. Remove cooked sausage when wine is mostly cooked down and set aside. If there is a lot of grease drain all but 4 TBS (if there is not that much left use butter).
  5. Add 4 TBS of flour to the oil to make a roux.
  6. Slowly stir in milk to create a cream sauce. Remove from heat and allow to cool for 10 minutes and add sausage back in.
  7. Stir in cheese (reserving some to and add any desired seasoning to taste (ex. onion powder, pepper flakes, herbs, salt and pepper).
  8. Stir in egg (you want to the mixture to be warm but not hot enough to cook scramble the egg).
  9. Boil the pasta and then run it under cold water to stop the cooking.
  10. Put a thin layer of sauce on the bottom of the pan.
  11. Fill the shells and layer in the pan. Top with more sauce and a sprinkling of reserved cheese.
  12. Bake at 400 F for 20 to 30 minutes until heated through. Allow to stand 5 minutes before serving

If you want to freeze it do so before baking. You can bake it from frozen which will probably take extra time (30-60 minutes more) or if you think ahead thaw it in the the refrigerator and bake like normal. Nothing besides the egg needs to be cooked so you just want to make sure it’s nice and hot inside. Enjoy!

Christmas Wontons Recipe

Homemade shrimp and pork wontons recipe - Rae Gun Ramblings

One of the traditions my family has for Christmas is having and making from scratch delicious wontons. Oh so yummy. Since I’ve moved to Utah I’ve been making the wontons every Christmas Eve the musicmaker has said, “oh what are these new things, they are so yummy” despite the fact that I’ve made them for him for the past 4 years. Oh well I guess that means I should make them more often. I just make a bunch up and freeze the leftovers for quick yumminess. In fact I prefer to freeze them all before cooking I find they stay in tack better that way.

Christmas Shrimp and Pork Wontons Recipe

1 small pack frozen chopped spinach (thawed I didn’t bother to squeeze out liquid)
1 lbs ground pork

1/3-1/2 lbs Shrimp (raw and chopped)
1/4 tsp garlic powder
1/4 tsp ginger powder
1 tsp salt
1 tsp sesame oil
1 tsp soy sauce
1 egg
salt and pepper to taste

Mix it all up and place a small amount on the wrappers (you can find them in the refrigerated veggie section of most regular markets). I think about 1/2 tsp works but you’ll figure it out. Wrap one and boil it and taste it make any adjustments you like. You want the wraper to be translucent and the the wontons to be floating (I think it was about 5 minutes, I’m not sure, think ravioli with a raw filling). Serve it with a little splash of soy sauce on top. And just for you guys I made a video of me foldin these guys because I know it can be tricky.
